Ingredients:-
4 tbsp. Vegetable oil
2 tbsp. Ghee
200 gms. Red onions sliced
1 small Chicken with bones cut into half
400 gms. Long grain rice
For the spice mix:-
1 tbsp. Salt
2 pcs. fresh Orange zest
½ tbsp. Cardamom seeds
1 dried black lime/whole yellow lemon
½ tsp. Cinnamon powder
¼ tsp. Clove, crushed
2 cups Tomato puree
For Garnish:-
½ Orange, sliced
⅓ cup Almonds, fried
⅓ cup Raisins, fried
Mint leaves
Method:-
- In a pan, heat oil and ghee. Add and roast almonds for a minute. Transfer to a bowl.
- In the same oil and ghee mixture, fry the raisins until they puff up like balloons. Transfer to a bowl.
- Again, in the same oil and ghee mixture, fry onions on a high flame for a minute.
- Once the onions start turning golden brown add the chicken and sear it.
- Then add tomato puree, green cardamom, cloves, cinnamon powder, orange zest , whole lemon, salt, water and cook covered with a lid for a minimum of 15 minutes.
- Heat ghee in another pan and transfer the cooked chicken to it and pan sear on a high flame until charred.
- Now add rice to the gravy and cook on a high flame for 10 mintues. Once the water on top is dried up, lower the flame and cook covered with a lid for 15 minutes.
- Assemble and garnish as shown in the video and serve.
Delicious Chicken Majboos is ready to eat.

Kabsa , كبسة, kabsah is a mixed rice dish that originates from Saudi Arabia but is commonly regarded as a national dish in many Arab states of the Persian Gulf.
The dish is made with rice and meat. It can often be found served in countries such as Saudi Arabia, Kuwait, Bahrain, Qatar, the United Arab Emirates, Oman, Yemen, southern Iraq, Ahwaz (Iran) and the Negev desert in Israel. The dish is also popularly known as makbūs/machbūs.

Even though it looks delicious (as most of your dishes), Majboos/Makboos means that both rice and chicken must be cooked together. The word Makboos is just like Kabsa but in a different slang. The word Kabsa comes from Yakbos which means gathering things in the smallest space. Also, I think you forgot to add garlic, which is a very important ingredient. - Cinnamon must be a stick - Replacing the black lemon with a regular one will produce a SIGNIFICANTLY different flavor. - Ginger (fresh or powder) is preferred in must Kabsas/Majboos. - If you wanted to give it another try later, try creating big holes in the black lemon before throwing it in. I want to say that I tried this recipe and absolutely loved it especially the touch of whole fried almonds and raisins. It cut through some of the heaviness. Also since I did not have lemon, I did not use it but I did have some oranges so I zested 2 oranges in place of whole lemon/black lemon. The taste was simply amazing. Will make this again. 👌🏼 Thanks Chef!

The oil or ghee you fried the chicken with is better that you slice thin pieces of onion and fried it with some suger , black lemon powder and a pinch of tumric !! When it is done transfer it on the top of your rice to observe the sweetness , the flavour of ghee and also the smell of the fried chicken ! When the rice is coocked well remove the onions from the sureface then serve the rice put the onions and finally the chicken Enjoy !! Love from KSA
This is Kabsa a Saudi arbian dish. Majboos is different and it's from Kuwait. In majboos the tomato is served as gravy sauce and not cooked with the rice.

What's is the difference between majboos and kabsa bro , I know the how is kabsa prepared , but don't know how majboos is prepared , and how they are different from each other and which one is spicy or non spicy Can u explain me ..
