    That heavy oval pot is your trusty go-to!! I found a big ole heavy restaurant grade stockpot that a local cafe was throwing out. I asked the custodian, In Spanish if he wouldn't mind if I took it, since he was throwing it out anyway. He was so delighted I spoke Spanish (I have this Anglo face, and... a Mexican hubby), so I was instantly his best pal.. That pot has serious mojo, and I cook so many great stews, soups, and just today, a pot o' bones...with stewing pork, tomatoes, green peppers, simmered nice and long....Many napkins, dipping hunks of baquette bread, sticky fingers. And a happy husband...Ai-eee....Oh bebe...

    Absolutely loved your recipes for the Roux and the Chicken meal. It's whats for dinner tomorrow in our house.... I would love to have a Pot like the one you used for your Chicken Fricassee. I inherited a similar one only somewhat smaller from my grandmother, I love it. It is a Hard Cast Hammered Aluminum oval pot with a lid. I use it all of the time. Yours is larger, any tips of where I could find one like it? Love your Cajun Cooking and all of your videos!

    You must be from Louisiana (because of the Pot) brings back memories ,,this looks so GOOD! I make this all the time except I call it "Smothered Chicken" I live close to Sulfur LA (Port Arthur Tx)

    I always add carrots and potatoes to my chicken stew, whereas my fricassee' is made with only chicken. Cheers my friend. Remember Boo, it's your pot and your meal so you control what is put into it. Cheers!
