I love egg plants, especially in fish sauce. Since I don't find garden eggs here, I discovered egg plants years ago and use it just like we use garden eggs in Nigeria for recipes. I never tried my egg plants in egg sauce. I'll definitely try it soon. Old yam is the best like you said and I only add sugar when the yam is new and bitter. I love smoked anything too😋😋😋😋love it!

Looks fantastic!! You may want to look up vegetable oil! It’s very bad! Try other oils like olive oil or avocado oil or even coconut oil!
