Hyderabadi biryani (also known as Hyderabadi dum biryani) is a style of biryani originating from the kitchens of the Nizams of the erstwhile Hyderabad State with basmati rice and meat (mostly mutton) Originating in the kitchens of the Nizam of Hyderabad, it combines elements of Hyderabadi and Mughlai cuisines. Hyderabad biryani is a key dish in Hyderabadi cuisine and it is so famous that the dish is considered synonymous with the city of Hyderabad.
Ingredients:
1 kg Chicken
1 tsp shag jeera
1 tbs ginger garlic paste
½ cup fried onion
½ cup chopped coriander & mint leaves
1 tbsp Ghee
1 lemon juice
1 tbsp kashmiri chili powder
1 tsp cumin powder
1 tbsp garam masala
½ tsp turmeric powder
1 tbsp salt
400 ml yogurt
4 pcs green cardamon
1 inch cinnamon
3 pcs green chili
1 pc bay leaf
3 cups basmati rice
5 pcs green cardamon
6 pcs cloves
1 inch cinnamon
1 bay leaf
1 tbsp ginger garlic paste
3 tbsp salt
3 liters of water
-Toppings
3 tbsp Ghee
Chopped mint leaves
½ tsp garam masala
½ cup fried onion
2 tbsp saffron milk
