shes using an electrofreeze it looks like. I think EmeryThompson is the preferred machine of most italian ice manufacturers.
I dont get it, its not really healthy because they put simple syrup and sugar, thats overkill, if you want to add sweetener for extender just only settle for one type. 😀

The water is just added as an excuse but really, its just sugar

I did some research when I made Italian ice at home, the reason why they are adding different forms of sweetener just for the texture, since there is no diary, certain amount of sugar is to be added to prevent the ice cream from becoming crystalline instead of what you see here.
