Chia Flax Sesame Seed Crackers - Vegan & Gluten Free

I love me some guacamole, and though I love eating corn chips, they aren't exactly the best for my digestion.
I found this cracker recipe (and made some tweaks) in Food 52's Vegan cookbook, and it's the perfect alternative for the corn chips with my guac!
Here is what you'll need:
1/4 cup chia seeds
1/4 cup flax seeds (whole)
1/2 cup sesame seeds
1/2 cup flax seed meal
1 1/2 tbsp tamari
1/2 tsp garlic powder
1. Place all the ingredients in a bowl. Stir with a spoon until well incorporated. Cover and let the mixture sit on the counter at room temperature for about an hour, or until the mixture turns to a paste.
2. Preheat the oven to 350F. Dump your cracker paste onto a baking sheet covered with either a piece of parchment paper or a silicone baking mat. Smooth out the paste as evenly and thinly as possible (think cracker thin). Score them with a knife or pizza roller in the shapes you'd like your crackers to be so that they are easy to break off once they are done (think perforated edges: don't cut them all the way through).
3. Bake the crackers for about 35 minutes, or until they are completely dried out and maybe even slightly browned. Once they are done, turn off the oven and leave the oven door open to let the crackers dry out completely (I leave mine for a few hours).
4. Once they are cool, break your crackers into pieces along the scored edges. Store in an airtight container at room temperature for up to one week.
Enjoy!

Thanks for this! I made these last night and they taste great. I just need to cook them a bit longer + not use tinfoil next time since they sort of stuck to it. (I had no parchment paper left). I'll be making these regularly now :)

I think I'll try this. You left out the "full cup of filtered water" in the ingredients list, which baffled me for a while cause a tablespoon of tamari isn't going to hydrate all those seeds--lol! Thanks for posting. :)

Hm...the only thing I can think of is that maybe the crackers were too warm when you covered the jar or else there may have been moisture in the jar...do you recall that being the case? If not, let me know and I'll try to continue trouble shooting with you!!

Nice video. I like your attempt at being healthy, but you got a couple problems. 1, flaxseed and ground flaxseed in particular have very low burn points which destroys the nutrients of them when they were cooked!!! 2, Isnt silicon cancer-promoting especially when heated. I can accept the second issue but the first issue is a fact.

  • @llobley

    @llobley

    5 жыл бұрын

I hear you! I actually don't bake them at a super high temperature, but you bring up a good point. Do you know the temperature at which the nutrients are destroyed? Perhaps a dehydrator would be best here!

While flaxseed OIL should not be heated because it can easily oxidize and lose too many of its valuable nutrients, it appears that heat does not have the same effect on WHOLE flaxseeds. ... Research studies have shown that the ALA in flaxseeds and the lignan phytonutrients in this food are surprisingly heat stable.

Good video. However, using an oven removes nutrients and we should not be eating diary products, so the header a bit misleading as a vegan recipe.

Kush I nondairy in the crackers. You have the option to eat dairy or non dairy cheese WITH them. Stop the carping. And don’t tell people what they should and should not be eating.
