Yay! We finally found something James approves of!! Sous Vide is French for 'under vacuum' and is a method of cooking where food is placed in a sealed plastic pouch then put in a water bath to cook for a long period of time. Of course the chefs are going to love this one.

    Walmart sells one for like $80 that works just as well. The only features it lacks are Bluetooth/Wifi control via an app (don't care) and the ability to adjust temps down to tenths of a degree (also don't care).

    This gadget has definitely changed my life and that of my father. He's disabled, has trouble standing for even a short while due to a spinal injury, but loves to cook and experiment with seasonings and tastes. This lets him do that. He can sit at the table, with all his things gathered, slice and dice and get everything just the way he wants then put the meal with the seasonings in a bag, submerse it in the bath, set the anova, and then just sort of forget about it until he's hungry. This lets him do what he loves and gets him better results than he'd ever be able to get otherwise due to his disabilities. One thing to note, however, after doing some research and trying it myself I can say with fair confidence that meats should not be cooked with butter using this method. All of the fats and "good stuff" that adds flavor, makes the meat soft, etc, will be attracted to the butter, meaning that the stuff that really adds flavor will be left behind in the bag instead of in your meat. If you want to have butter add it after you're finished cooking. This video certainly helped me decide whether or not to get my own, I got it for a fantastic price on sale during amazon prime day and got the wi-fi enabled one, meaning that I can set and use this from pretty much anywhere in my home as opposed to just in bluetooth range. And, if I connect to my network from other wi-fi areas I can even control it from work or the like. Furthermore the "ice bath" option this thing gives is absolutely fantastic. It lets you have perfectly cooked meals ready for you by the time you get home. Just set everything up in an ice bath before you go, set it for the time you want it to be cooked, and then press start on the app. The ice bath keeps everything fresh and when it's time to get going the anova heats everything up perfectly and gets it cooked properly by the time you're home. Just do note that the back of the machine needs to be facing over the holder and mustn't be facing over the hot water, excess steam can and does fool the sensor that's on the back, often making it think it's at temperature when it really isn't. A lid can help with this or a using a bunch of little plastic "sous vide" balls to float on the surface of the water and act as a self-forming lid.

    I'm also disabled and have had such a hard time adapting my cooking now that I can no longer stand for long times to slave at a stove. I just got one of these, and it's already changed my life.

I got that instead of this sous vide dildo because this sous vide needed plastic bags and I coerced the Prime Minister to make plastic illegal pretty soon. Its not quite the same its just a pressure cooker but simpler and fun and will also decarb your weed.

    I'm amazed it took you guys this long to get one. I highly recommend doing a sous vide creme brulee in mason jars. It will elevate your cooked custard game quite a bit. Perfectly done all the way through, no wobbling to test it, and the ability to tweak the temp a few degrees if you want it firmer or runnier. Amazing!

    You should definitely try sous vide cooking if you have trouble in the kitchen. This is precision cooking, all the guess work is taken out. You can make breakfasts and desserts too. I always hated chicken breasts, I think they are dry and tasteless. Now I love them, throw them in a bag with herbs, spices and usually butter and they come out fabulous.

    This is the kind of stuff i want more of! Telling us why things work so well, as in the actual chemistry/physics behind it. This is seriously one of my favourite videos from you just for that bit about the protein. I belive you need information like this too truly understand cooking and to be able to experiment on your own. Which i really wanna be able to do one day. Im all about trying to make cooking something fun and not just a chore, like brushing your teeth. This helps! Keep it up, love your channel!

    I actually bought one of these things based on this video and it's amazing. Just polished off a Wagyu sirloin, which was even more amazing than Wagyu sirloin usually is, and have a couple of chicken breasts with tarragon and butter (thank you James) ready in half an hour. And amazingly, no Australia tax - AU$149 for the wifi + bluetooth version.

    Only used about 6 times so far but food turning out great. kzread.infoUgkxK2YRU9uBOXzuIEV660Qo3sX7dJDJLg72 Nice tender roasts. You do want to get a lid to go over your stock pot to keep water from evaporating. I've used it for 6-48 hours with lots of luck. A lot is trial and error to figure out since thickness and cut help determine the best time. 135 always gives a perfect med (pink all the way through). I cooked frozen solid 3 1/2" roast for 48 hours ... it was so tender its almost falling apart. Nice to put it in and just forget about it, with silicone lid I didn't have to add water at all during 48 hours.

    There is no doubt searing the meat would have added to the taste, but it would have little to nothing to do with the product they were testing and what it can do on its own. I do however agree that cooking salmon with skin would make it obvious to crisp up the skin to make the perfect demonstration of what can be done with excellent temperature control that is near impossible to do any other way.

    My dad received one of these a few years ago as a Christmas gift because he loves his kitchen gadgets. (Deep fat fryer, pressure cooker, sous vide wand, industrial fry cutter) he loves it. And it’s always a treat when he uses it because honestly he’s a great cook without it, but it just takes it up a notch. If you get the chance, try burgers. But remember to sear whatever meat you cook for a couple minutes on each side to char it slightly for the best results. Sous vide burgers have become a specialty that we have honed here. They are the best burgers I’ve ever eaten. I can’t wait to see more with this.

    We have one at home (from Sansaire, though) and I just love it! No more dry chicken, no more smell from frying salmon that never leaves the kitchen. Absolutely wonderful! This is one of the few kitchen gadgets that my boyfriend talked me into buying, and in the end I'm really glad that he did :)

    I have one (given a cheaper non app version) And I love it! its the best for steak, chicken,poached eggs- Anything! But I also like to sear (in a cast Iron)or broil everything after sous vide ing it- it gets that perfect browned outside with a juicy center!

    i have been cooking with Sous Vide for over 10 years and got to be the best way of cook eggs and meat plus top it of you can do a full dinner and you dont need to do anything just cut and serve up the food if you would like to brown meat a little butter in a frying pan and away you go. i do home cooking with a water bath machine and sous vide wand never let me down plus a time saver. I go through 100 bags for every 8 weeks and save money buying in bulk foods. when you get one tray eggs at 64c temp and for 43 mins o m g pouch eggs are so so good but then put bacon in it o m g it looks good under a grill mmmm enjoy i have pics to show you on fb

    I have a sous vide machine, too!!!!! I love using it for meats, especially steaks because I dont have to worry about under/overcooking those more expensive cuts. Set it and forget it, just pat dry and sear and boom! Perfect steak!

    Still not convinced. If I'm cooking an expensive piece of meat I don't have a problem watching it like a hawk. And the extra step of having to sear it? Not for $180. I know how to cook perfectly delicious food without a cheffy thing like this. Glad it made James so happy, though!

    They have a $99 version in the US, the Nano, that does most of what the one tested in the video does. It just has a slightly smaller heating element, making the time to reach temperature longer and the size of the maximal cooking vessel slightly smaller and the control is bluetooth only where the most expensive current version can be controlled using wifi. I must admit I do not use the wifi option on the one I own as much as I thought I would. Just did it once when starting a cook in order for it to be ready when I came home from work. Of things to cook I have fallen in love with cooking corn, eggs and transforming cheap cuts of meat into something that eats well enough to be served at a decent restaurant.

    I own this gadget and I love it! Used it to make carrots for Christmas Day (was hosting) and it was brilliant. A lot of things you can sous vide in advance and fridge till you’re ready to finish them. Making the cooking on mass so great!

    My husband got this exact model for Christmas. We have yet to use it because we’ve been crazy busy BUT I’m very excited! My aunt has this as well and made the best beef tenderloin I’ve ever had at Thanksgiving. Is it a bit much? Yes. But is it incredible? Yes!

    I've had my Anova for about a year & a half. Love it. I use it often for a variety of proteins and some veg dishes as well. Makes beautiful soft boiled eggs.

    i've had a sous-vide for years and i love the thing. the best thing i've made with it was cornish hen ... but you need to cut the whole thing in half to do it. it's great because you don't need to be "hands on" to cook and you can cook things such as beef shank for two days to get incredible results.

    I got one of these brilliant gadgets for Christmas and haven't stopped cooking since! Sous Vide Buffalo Chicken Wings are the most juicy, succulent and amazing things I've ever had. Steaks, fish, eggs, everything is spot on. Loads of recipes in the app too. Glad to see you all like it!

    Sous vide is expensive but well worth it, currently looking into buying one specifically this is one of the ones I like the look of but I agree with Ben and buying it on Black Friday or when ever it's reduced is the best choice.

    I was an early adopter - bought my Anova when it was first crowdfunded. That early one doesn’t have all the bells and whistles, but if functions flawlessly. I even built a Frankencooler from a Coleman cooker in order to sous vide large junk pieces of meat for 48-72 hours without having to worry about evaporation. Meat, fish, poultry, sauces, even eggs...after a decent knife set, a decent set of pots and pans, and a scale, the Anova ranks right up there as a necessary kitchen tool. It’s more than a convenient gadget, it’s a time- and money-saver, and turns a good cook into a great cook.

    Old video but just watched it, got one of these years ago when it was a kickstarter. Still works great, and while I dont use it all the time it is a fantastic device. My favorite with this is eggs.

    when i sous vide, i like to sear the meat on very high temperature for a few seconds to get a nice crust without overcooking the already perfect insides

    Second this. After sous vide I get a cast iron pan or the grill to max temp and sear whatever meat for a nice crust/traditional appeal. Straight out of the sous vide, meats appear bland and unappetizing. Even more important is the caramelization of the sear to the overall taste of the dish. Sous vide provides perfect through cooking and the sear provides the nuance flavor profile that makes a good dish great

    Yep, cook it 1 level of doneness lower than what you want and then sear it off after - best of both worlds

    We started cooking sous vide using an insulated picnic cooler, a kettle, and a meat thermometer. Worked great. We've since sprung for a controller, but not yet a heater/circulator.

    Speaking as a vegetarian, I thought this would be useless to me until I saw Binging with Babish use it to temper chocolate. Is it worth the price for my broke butt, of course not, but in an alternate universe where I make a good salary? Ya girl is making SO MANY delicious candies with that shiz.
