Chef Jackie Ang Po's Salt and Pepper Pork Ribs ( or liempo)

Salt and Pepper Pork Ribs
1/2 kilo Pork liempo or Spare ribs, cut into bite size pcs
1 tbsp chinese wine
2 tsp rocksalt
1 tsp sugar
1/2 tsp pepper, cracked
1/2 tsp five spice powder
2 tbsp cornstarch
2 tbsp water
3/4 cup Camote starch
6 cloves garlic, chopped
1 sm onion, chopped
1 sm red pepper, cubed
1 stalk green onion
1 pc green sili
salt , pepper and sugar - pinch
Procedure
1 Marinate Pork Liempo in the seasoning and spices for 30 min.
2 Add water then cornstarch then mix everything.
3 Dredge each one in camote starch
4 Deep fry until golden.
5 Sautee onion, red pepper, green sili for a few minutes.
6 add the seasonings and garlic and green onions last. Toss in the pork .
7 Serve Immediately
