Chef Atul Kochhar's Chickpea and Kale Curry
Chickpea and spinach curry is quite a common dish in India, but as I had some kale handy I decided to devise this version - and I have to say, I'm very pleased with the result. I hope you will be, too.
You can replace the water with vegetable or chicken stock, if you want, but it's really not necessary. This is a quick-and-easy curry, and one of those dishes I would just put in the middle of the table for everyone to help themselves. This recipe is vegetarian and vegan friendly.

what a lovely chap! humble and concise... thank you for sharing with us.! wow
Love the way you explain it all 6 minutes. Superb
Awesome, love how you cook in an actual kitchen instead of a set.
Lovely! This is clear and easy to follow. Seems very delicious too. Gonna try this for sure. And this might be irrelevant but Chef Atul is perhaps the neatest, cleanest chef I’ve seen! Not a thing out of place! His hair, his spotless ceaseless shirt, and the kitchen equipment. Just, wow.
Your dishes are absolutely amazing
Good looking food....great looking Chef!
Chef Atul, I have failed several attempts to incorporate kale in my cooking. Your dish has inspired me to try once sgain. Thsnk you.
This man is my new favorite chef
That looks so good 🤩💚 Thanks for your recipe 🙏
I love, love this dish, I will make it over and over for life. And so healthy! Thank you.
I just prepared dal makhani using your recipe and trust me this is by far the best dish i ever prepared.
Thank you looks delicious and healthy will definitely try this😋😋
I just cooked this but with spinach. Badass!!!
Amazing chef..love your videos
You are absolutely phenomenal to watch and listen to - I made the dal makhani last night from your childhood- after that my daughter said she will eat any of your recipes; any time. She trusts you😁
I was watching your video of yours from the UK Food Network and you were the first chef to explain why you should at Gram masal near the end of the cooking time of the dish thank you so much for sharing your Knowledge
Just made this dish after seeing your video today. ❤Came out awesome and delicious. Thanks for this simple, healthy recipe. 😊
Amazing chef u n chole
Lovely recipe and perfect cook!
Great recipe , thanks for sharing.
Love it! Thank you.
I like your simple cooking recipes. Thanks 🇨🇦
Really good- the fresh ginger and lemon juice at the end were pretty different from my usual chickpea curry recipes and gave it a fresh POW! By my usual standards for curry, it's incredibly fast and easy. I could even eat it cold, and it makes a great leftover because kale can take a nuking.
Thank you Chef, it's is fantastic recipe
I don't love to eat kale either but I appreciate how you incorporated it.
You are a wonderful man! These recipes are amazing!!
Very simple and no bologna. I subscribe. Keep up the good work.
Love the use of induction, no problems with the noisey extraction then.Love your recipes chef
Simply the best❤
Love this recipe. Thanks for sharing! Such a convenient quick yet tasty meal. Honestly though, I can't stand kale so I subbed it out for spinach instead
Looks amazing
This looks quality!
Good to see you after long 👍
Looks so delicious 😋
Thank you Sir for your videos. I hope someday to have the privilege of tasting some:)
Miss Atul Kochar 's wonderful recipes.
Fantastic twist ! I always add spinach but will now use Kale. Thanks for the tip.
Lovely recipe. But please tell me what that beautiful music is from 0:25 to 0:50min!
Athul please post more recipes... We are eagerly waiting for your next video
Love the recipes...however, if I may suggest putting the ingredient list in the description. You may want to take your spice box and do a video on what is in there as well as describe the different spices in the description. Thank you!
Nice recipe thank you
I am totally going to try and make this even though it will not be even 10% as master chef
thank you sir for nice and very usefull video is said that kale is not good for hypothyroid is true?
Thanks Atul.
Thank you chef
Awesome 😎
Just cooked this with some blanched broccoli instead as had no kale left. It was dope.
I can't eat kale or chickpeas with my bowel adhesions and IBS, but I do eat and make curry, mild ones, and I love his simple, relaxed style, no tantrums or drama, very watchable chap. The spice box is beautiful, makes them look like a paint palette, puts my jars and packets to shame!
You did this awesome lamb chop recipe on b4u years ago can you do it again on here thanks

Wow

Lovely: spanish cooking also pairs chickpeas with spinach and, latterly, kale. More vegan recipes, please!

Rita Wing you can just type indian recipes and they are all going to be nearly vegan. All you might have to do is replace Ghee or Paneer with suitable substitute if they were being used in the recipes.

For me, I'd love to try this out coz I prefer less spicy, simple vegan food except for the canned peas😊. I prefer to soak it overnight and boil it.... No processed foods for me😊
Atul, Love your style of cooking. You're one of the few chefs on the net who don't taste their own cooking. Is that the secret of your fitness (lol)? Keep up the good work.

You know, in the Hindu culture, we believe a good cook NEVER TASTES his food... he/she just knows, & those who taste ar not good cooks. I used to see the elders of our homes never tasted while cooking. Even today meny do not taste. It is considered rude & unhygeinic.

@Ronald S I dont see a point in tasting the food you prepare for the purpose of making a video, its just something viewers like to see. Seasoned or not, he can just go: "this is perfectly seasoned" and we would know fuck all about how it actually tastes. There is no point really. Just like there is no point in reviewing sound speakers when you cannot let your audience hear the sound they produce. The point of food recipes is in technique, its how you make the dish blend, whether you like it more salty, tangy, sweet or spicy is up to you. On another note, Im pretty sure if you prepare food for living you pretty much know what something tastes like just by experience.
Nice👍
Thanks sir 🙏
anyone knows where I can buy this deep induction pan from ?
❤❤❤
Thank you.
I made this today it was nice and I would have it again however it's not the best Indian style chickpea curry I've ever had
Nice video. What are good alternatives for kale? Its not a cheap vegetable in my country

What kind of kale is this? Looks like curly kale but could also be savoy.
An even better twist is using fenugreek leaves with sweet green peas.

When i soaked my chickpeas over night, do I have to boil them for a bit before i add the kale? Otherwise the kale would be overcooked right?

I think it was Jacques Pépin who said something along the lines of ‘when making a recipe for the first time, make it the way it’s written so that you know how it’s supposed to taste ... .’ Since I’ve started doing that it’s amazing how many new flavor profiles I’ve discovered, often by using fewer herbs and spices than I was tempted to .
Sorry Atul, my Irish grandfather wouldn't eat kale. He said it was cattle feed. So in this recipe, I'll be using spinach.
I might make something like this tonight. It is true that chickpeas are high in protein, but it is 'low quality' protein. This means that it lacks certain essential amino acids. Very few vegetable sources of protein contain complete protein, these include soya and quinoa. It is great to be a vegetarian, but you need to know what you are doing in terms of nutritional science.
