    Minestrone: start beans in a pot to cook and use the bean water to start your soup. The bean water gives a thickness and richness to the soup. We use borlotti beans (cranberry beans).

    green bell peppers are picked before yellow ones and yellow bell peppers are picked before red ones. they're all the same plant though!

    Actually pearl barley has had the bran removed, hulled barley is the whole grain. I learned the difference from Dr Greger. Unfortunately it is harder to find hulled barley at stores, but I get it from bulk bins at my natural grocer.

    after looking up the difference between pearl and pot barley I realized that the 'whole grain' simply means without the husk outside (which I think is not edible). The difference between pearl and pot barley is how long it is tumbled for. Pot barley typically has more fiber and protein as a lot of that is lost during the pearling process.

    I think green peppers take shorter time to grow, also a bit tougher, so easier to store and transport.

    Yes. They start as green and mature as red capsicum when they're grown for longer.

    Green peppers aren’t yet ripe, so are less expensive to produce.

    I started buying organic whole wheat pasta because it is so much cheaper than high protein pastas and then add extrabeans, peas or chick peas and less pasta if trying to reach a protein number. You may have to try a few whole wheat pastas to find the freshest brand. I went with the fresher Michigan based Meijer's Organic Whole Wheat instead of Italion Made Barilla. Meijer is a large grocery chain here, so look around and try a few brands as whole wheat does not keep as well as regular pasta.

    I think this is my fave vid ever you've done. None of these recipes are hard or expensive. This is true meal prep in my book. Blue zone inspired, high plant-baed protein, and "regular" food---no hard to find or expensive ingredients. Thank you!!! ps Love Thrive Market! All of their boxes come in environmentally-friendly packing--no plastic packing like what comes in amazon or target boxes.

    3:40 All bell peppers are green then turn red or yellow or orange, etc when they ripen. So I'm guessing because they take longer to ripen, costing farmers more time, they cost more. I know in my garden, they stay green a looong time before they start turning red/yellow/orange. That's why they get sweeter too, the longer they ripen, so your ripest will be the sweetest, if you didn't know. I usually just use them green because it takes them so long to ripen lol.

    Yeah no. In your garden, yes. But the ones you can buy nowadays are bread to be this or that colour. The green and yellow can never go red.

    I like chickpea pasta, but for my family to like it , I mix half chickpea, & half whole wheat, as long as they are both the same shape, the color doesn’t matter, so then they’ll help me eat it . Often times I’ll make a big delicious meal , & end up eating it every evening for a week, so I have to try be more creative since I’m the only vegan. It’s hit or miss , & unfortunately they add a little bit of animal products to my dishes unless they’re in a hurry.

    I never knew about the Blue Zone diet . The funny thing is my great grandmother was from Palermo Sicily , granted not necessarily a blue zone , but she passed away at 102 years old which is crazy to me but she was very healthy.

    I love your commentary 😅😅 These look great, I definitely will be trying one of these but buying some liquid aminos to keep the salt down.. I also just learned of SUMAC, a natural seasoning that gives the salt flavor but without the salt. 💜💜 PS Organic Tofu!! Be careful not all Tofu is created equal....and can really be hazardous on your reproductive system and more. 🙏🏾💜

    Pearl barley is actually not a whole grain. The pearl refers to polishing off the hull. But I don’t know that I’ve ever seen whole grain barley.

    Hulled barley (sometimes called pot or potted barley) is considered whole grain since only the inedible hull is removed. Pearl barley has had the *bran* removed and, as you said, is not considered a whole grain.

    I saute in water, starting with a tablespoon or two and adding more water as needed. Not sure how that would work on tofu, but most veggies are easy this way.

Just a very small request though please, but if you’re cooking for others, please please please could you use a different utensil to taste test the recipes, & not the same utensil that you’re cooking with, or using to ladle into separate containers afterwards. So sorry, just very particular when cooking for others & that’s one thing that’s high on my hygiene list. Thank you so much for your creativity! You’re an inspiration and deserve to do well! ❤

    A green bell pepper is actually just an "unripe" bell pepper.. it is picked when green instead of waiting for it to ripen. I hate them.

    Red peppers are just fully mature green peppers, they take longer to turn red & can’t be cut from the plant until they’re red, hence the drastic price increase. They’re super easy to grow though.
