Love this one so much!!!! Here’s my writing of ingredients & instructions. I may have missed things so anyone feel free to edit/correct it ☺️ 4-8 cups water 1 Tbs of OG 3 in of charizzo 1 hotdog Bacon 1/2 onion 1 whole tomato 1 whole Serrano 1 whole jalapeño 1/4 cup of tomato sauce 1 Tbs of butter First place bag of pinto beans (smaller one) in pot of 4 cups water (after rinsing beans thoroughly) bring to boil them simmer low covered Add 1 Tbs OG Cut bacon, hotdog and charizzo in separate frying pan with onion; prep Serrano by poking a couple of holes Cut tomato, poke hole in jalapeño; 2-3 cloves garlic Stir and brown bacon a bit prior to adding charizzo and hotdog. Add onion. Add garlic once onions are done along with Serrano pepper. Add tomato and let sit on low while beans cook. Cook beans for hr and a half, checking for need for more water, before adding bacon veggie mix plus jalapeño, 1 Tbs butter and 1/4 cup tomato sauce Add cilantro and cook for 15-20 min. Cool with lid for at least 30 min for total of 2 and a half hours. Add salt or OG maybe 1 tsp, if tastes necessary. Cool 15 more min if needed

Linda Baughman I’m assuming it was 2 cups because there’s a part towards the beginning of the video where he says 8 cups of water to 2 cups of beans with a tablespoon of OG. Since he only adds 1 tablespoon of OG in this video I’d say it’s safe to assume he used 2 cups. I could be mistaken though but I’m gonna make this today and use 2 cups. The part in the video is at 1:25. Oh and the beans are pinto beans.

One more thing. You didn’t include the salt pork. I just made this for dinner tonight and I added 4 strips of salt pork with 3 strips of bacon. Your breakdown of the video was spot on April! This was all I saw that you missed. Other than that it was perfection! They were yummy and delicious! If you can’t find the salt pork that’s already sliced like I couldn’t…I cut the slices about 1/8 inch thick and diced them up smaller as in the video. It helps if you put your bacon and salt pork In The freezer for 45min to 1hr first because this firms the meat up and makes it easier to cut into thin slices as room temp bacon and salt pork is too slippery to cut warm. I’ve learned the hard way lol.

Bonus points for making the entire house smell like a pot of beans! My Grandma/Abuela on my Dad's side ALWAYS had a pot of beans going in the kitchen and made fresh corn tortillas every morning. I think it's one of the earliest smells burned into my brain. To this day if I walk into a house that smells like that, I know I entered a home, not just a house.

Arnie, I made these beans for my family 2 months back. Everyone was afraid to try them because they had never had charro beans before. Once they tasted them they ate the entire pot. They left nothing behind. All the juice was soaked up with cornbread.

So, I just watched your mom make Mexican rice and had to find this recipe since you mentioned charro beans. I knew there was a reason I purchased 8 lbs of pinto beans last week (seriously)... I just told someone the other day, with food prices rising... I am so glad that, culturally (African-American), I grew up eating what people are now calling 'budget meals'... I'm thinking we were never on a food budget growing up, my family just knew good food - My grandmother would feed a gang of grandkids with a pot of chicken and dumplings or beans and cornbread... We never begged for restaurant food 😁 On another note, Mexican cooking is so magical and life would totally suck without this incredible cuisine. Please keep sharing (and thank you)!

Old mexian lady gave me a recipe for beans like this - I was doing an inspection on her house - and she had the HUGE pot of beans on the stove (which I had to move to test the stove for carbon Monoxide) it smelled so good, and I mentioned just how wonderful it smelled - well, you tell Abuella her food smells good... she's gonna feed you (not my intent, we werent supposed to eat client's food or take gifts) not wanting to be rude I took the bowl of beans and hand made tortillas she handed to me and... OMG BEST.BEANS. EVER epic lunch. And I of course told her how awesome they were. And she started to fill a beat up old Tupperware and I said, no not right to take her food, and bowl with me. She looked disappointed. And I said... if you write down how you make this... I'll make them myself and teach my nieces how to make it. She liked that, and wrote her recipe down (in spanish) bit of a language barrier there - I can speak a little, but I can't read it worth a damn. And I had a Hispanic co-worker translate it for me. He goes... oh, this is for charro beans... and then says wow, this is a fantastic recipe - can I take a copy? I didn't even know charro beans were a thing. I still make them a couple of times a year... and I showed ny brother's girls how to make em' as promised (I have no children) Makes any kind of stewed beans look like dogfood in comparison. The old lady's recipe doubled up on the chorizo and bacon, no salt pork, no hot dog and no butter (there is a big dollop of lard involved) And 2 bottles of Negro Modelo. Otherwise, it's pretty similar to this recipe.

Hola, nunca he cocinado estos frijoles, pero ya me dieron ganas de hacerlos para acompañar una carnita asada! 😁😁

Looks delicious! I may try this using some of the leftover Christmas ham during the next week. The beauty of dishes like this is how flexible you can be with the ingredients.

Exactly. Ham would be perfect as well. I have used smoked sausage instead of hot dogs, because that is what I had on hand and needed to be used. Delicious.

Love charro beans. I top mine with fresh pico! I put tortillas in mine too for a little crunch!

I have always wanted to be able to make Charro beans but have not been successful. Made this recipe tonight and NAILED IT!! Thank you. So flavorful! Added in the Spanish rice. Both were a big hit with the Family. 😊

I watched this video twice and picked up on a couple of tips including bean boiling I hadn't realized. Thanks for the recipes and info. You and Kent Rollins both rock. By the way, I love your mom. She's awesome.
