I am playing a fire mage on Frostmourne with Tailoring/Enchanting, would u suggest going to Eng/Jewel instead?

Tailoring/engi or Tailoring/JC works too, Enchanting is the only option here that is meh, even then it is still a proffession, might want to consider keeping it if you're lazy :p

8% hit is not the cap for everything regarding rogues, while it is for abilities, it's not for poisons & auto attacks (17% for poisons & 27% for auto attack swings).

8% for main hand auto attack swings, we still call it the hit cap.
