Today I want to share with you CHANKO-NABE.
CHANKO-NABE is known for the Sumo wrestler's meal, to take various nutrients after the intense training.
Each Sumo Heya, which means stable, has its original recipe, and this is one of it!
One of my father's friends was an actual Sumo Wrestler, and he taught me the secret recipe.
serves 4
〈Chicken stock〉
5 chicken wings
1Liter water
ginger skin
〈Vegan Dashi〉
2 dried shiitake mushroom
2 pieced kombu kelp
1 Liter water
〈Tsukune meat ball〉
200g ground chicken
200g ground pork
2 tablespoons red miso (or other miso)
1 tablespoon sake
1 egg white (25~30g)
1/2 tablespoon potato starch or corn starch
1 tablespoon grated ginger
2 tablespoon chopped garlic chive (or scallions)
〈Other ingredients〉
cabbage, carrot, burdock root, Aburaage, Kikuna, Mochi, etc.

    I made this recipe for the first time last night and I must say, it was one of the best dishes I've ever made (and I cook alot). It was even better the second day after left in the fridge overnight. Thank Kitchen Princess Bamboo! This will definitely go into my regular recipe repertoire.
