முழு தனியா - 2 மேசைக்கரண்டி
சீரகம் - 1 தேக்கரண்டி
சோம்பு - 1 தேக்கரண்டி
முழு மிளகு - 3 மேசைக்கரண்டி
காய்ந்த மிளகாய் - 2
செட்டிநாடு மிளகு சிக்கன் மசாலா செய்ய
சிக்கன் - 1 கிலோ
எண்ணெய் - 3 மேசைக்கரண்டி
பட்டை - 1 துண்டு
ஏலக்காய் - 3
கிராம்பு - 5
வெங்காயம் - 4 நறுக்கியது
தட்டிய இஞ்சி பூண்டு - 2 தேக்கரண்டி
தக்காளி - 3 நறுக்கியது
மஞ்சள் தூள் - 1/2 தேக்கரண்டி
அரைத்த மசாலா தூள் - 5 தேக்கரண்டி
கறிவேப்பில்லை
உப்பு
செய்முறை :
செட்டிநாடு மசாலா தூள் அரைக்க
1. கடாயில் எண்ணெய் இன்றி, முழு தனியா, சீரகம், சோம்பு, முழு மிளகு, காய்ந்த மிளகாய் சேர்த்து 3 நிமிடம் வறுக்கவும்.
2. வறுத்த மசாலாவை ஆறவிட்டு, மிக்ஸியில் போட்டு அரைக்கவும்.

3. அகல கடாயில் எண்ணெய் ஊற்றி, பட்டை, கிராம்பு, ஏலக்காய், வெங்காயம் சேர்த்து பொன்னிறமாகும் வரை வதக்கவும்.
4. வெங்காயம் வதங்கியதும், இதில் தட்டிய இஞ்சி பூண்டு சேர்த்து வதக்கவும்.
5. அடுத்து இதில் தக்காளி சேர்த்து வதக்கவும்.
6. தக்காளி பாதி வதங்கியதும், இதில் மஞ்சள் தூள் மற்றும் உப்பு சேர்த்து, சிக்கன் துண்டுகளை போட்டு கிளறவும்.
7. 5 நிமிடம் கிளறிய பின், இதில் தண்ணீர் ஊற்றி, கடாயை மூடி 15 நிமிடம் கொதிக்கவிடவும்.
8. அடுத்து அரைத்த மசாலா தூள் சேர்த்து கிளறவும்.
9. ஈரம் வற்றிய பின் இதில் கறிவேப்பில்லை சேர்த்து 10 நிமிடம் கொதிக்கவிடவும்.
10. செட்டிநாடு மிளகு சிக்கன் மசாலா தயார்.

To tell you the truth, i dint roast it till dark. So my curry wasn't brown. I was hesitant to put all that kaaram, since i need to serve them to my kids. So i went mellow. The end result was extremely wonderful. Thanks for sharing. I like your way of subject delivery. Keep going & best wishes. Anything Tamilnadu, you're my preferred choice. :).
