No love for the Lake Trout. Do a quick Google search and you'll see most joke and refer to it as "eat the plank" still. Met up with Roger - / @cookingandfishing
We jigged lakers on deep water humps the bite was all over the place at times and the trout wanted different presentations somewhat regularly.

After I met up with Mario again co-owner of Brooklyn's Sotto Voce. We made a recipe similar to the Atlantic Salmon. Mario also made a hot smoked lake trout salad that was absolutely amazing if you aren't able to cold smoke a laker.
It consisted of the following ingredients:
1 20"-23" lake trout hot smoked 2 hours
2 Tablespoons Mayonnaise
1 Tablespoon Cream Cheese
Chopped Parsley
Chopped Cilantro
1 Jumbo Shallot
Lemon Zest
2 Teaspoons Blackening Season (add more if you'd like)

    Well they better be good eating because everywhere you stock them they become invasive. They stocked lake trout in lake Flathead in Montana for the sport fishing industry because lake trout get big and fight hard but now they don’t have any rainbow trout or Bluegill or anything.

    you need pike to control the population of lake trout also yellow perch, bass in lake simcoe ontario canada lake trout are heavily stocked and the fishing for any species is still amazing also walleye aka pickerel if you are canadian

    Great vid! I cook ours in aluminum foil ,fillet fish ,add potatoes ,carrots, onion,mushrooms, maple syrup,garlic pepper,teriyaki.Your smoked fish looks awesome!

    I've never had lake trout. I've only heard that it's a very oily and strong flavored fish. We don't have lake trout in my area so I'll likely never get the opportunity to eat it. I'll use the brine and smoker and try trout this year. I've heard that it's delicious too.

    Around here in Iowa, they call most bottom feeders trash fish. Any kind of trout would be really great to me. We have freshwater drums that would be the most “trashy” besides carp. But if your willing to put in the time and cook it right. They taste great to me!

    Interesting contraption...I smoke quite a bit as well. I know your only utilizing the Brute drum for cold smoke but is that model brute container ok for food consumption? I know they sell drums that are made to actually store water so they are food approved. Id be alittle leary using a brute straight outta Home Depot. Just an observation.

    Jigging macs, my fav. Look up salmon candy, video here a guy with a plastic bucket. Lots of brown sugar, honey I add yoshida teriyaki, and other typical seasoning make it thick, like syrup.. 1 cup of water max. Get meat skinless boneless finger size strips. Soak 2 days, mix well 2-3x a day... hang in smoker with toothpicks, hang 3hrs no smoke, then cold smoke with alder apple or cherry... raise temp after 8hrs or so to finish... only thing I do with my macs. Funny smoker hack, I was gonna do that with my diy cedar bakery rack.

    i have never heard anybody call lakers a "trash fish". here in Western Mass the only thing we might consider a "trash fish" would be bowfin, fallfish and pickerel.

    Cold smoke - you should never eat right away, let's it sit in a fridge or outside for about 6-8 hours

    Trash fish?! Where you fishing in open water? We got 2ft of ice! We smoke them, or you fillet them and cook them in a deep fry them, use an old refrigerator as the smoker, it's the old Lake Superior Finlander way!

    Love your videos but have to say you guys way over did it smoking those trout I smoke Lakers all the time just gut scale to help remove slime put brown sugar and kosher salt in water over night then rinse off put in smoker for one and a half hours at 225

    I really dislike this fish, originally from Cali but moved to Utah and well there's no oceans here so all we have is fresh water fish. People here love trout. I just can't I think they are way to boney and not worth the effort but they are fun to fish.

    You guys must hate the taste of fish. Your catch and cooks may as well leave out the fish. You have enough spices, sugars, and other crap to feed eighteen people. Five percent of what you use would be too much. Just fry or bake the blasted fish. Lake trout are fine tasting fish, IF you like fish. So is almost any fish. But you don't like the taste of fish, you like the taste of spices, surgars, and other forms of crap.
