Carbonating Cold Brew?!

Тәжірибелік нұсқаулар және стиль

We experimented with carbonating cold brew coffee at home. After trying some of the popular nitro cold brew we just had try creating it here. And guess what? It totally worked!

Nitro is supposed to make the coffee creamier and not fizzy, but this looks perfect!

Also, with milk and vortex stirring, I hope it could become a coffee egg cream? The old tradition was to use Fox's U-Bet chocolate syrup, whole milk, and high pressure seltzer stirred to a head. Modernity allows to play with other syrups, but would it work with the amount of water in the proportion of the cold brew? Some people make their cold brew really condensed though, so maybe some proportion would work? See egg cream background link and lots of recipes about the proportion of milk to seltzer to syrup flavor with some theories about the order to add. www.huffingtonpost.com/2014/06/05/egg-creams_n_5446888.html The place on Henry Street in Brooklyn has seltzer on draft for a higher pressure than you get in bottled seltzer. I don't know about the soda stream make. I've used cartridges on a siphon that were too flat for my expectation. I'm ready for dessert now!

My guess is all the particulates that are in the coffee explain why the coffee fizzed up so much and will limit the carbonation amount.

I have a DrinkMate (instead of a SodaStream) and it can carbonate anything, not just water, it has an automatic release for over pressure

Another off-label way to use the Soda Stream. A lot of people use their Soda Streams to make various carbonated beverages and you can find recipes online for people who use it off-label for everything from sodas made from fruit juice to making sparkling wine. But there's a caveat: it may void the warranty using it to carbonate something other than water, so that is a risk to take -- something about it potentially clogging the CO2 spout if I remember correctly. And that max line on the bottle is for carbonating water, not anything else. So if you carbonate something other than water, you're going to need to use less fluid -- as discovered herein for coffee.

Gail, your guesses are right. Less carbonation will make it less explode-y. :)

I'm greatly interested in cold-brewed nitro coffee, and would like to start making it myself at home (after getting some form of cold-brewer, like the OXO). Aside from using a Kegerator with "beer gas" (which is 75% Nitrogen/25% CO2) and a stout faucet, the closest thing I've seen for making it at home is to use a whipped-cream dispenser, which you charge using small N20 cartridges. Using a Sodastream will definitely result in a different end product, however. Nitrogen-infused coffee is supposed to be more silky as opposed to bubbly. I'd be curious to see the whipped cream dispenser trick tested out! There are two versions of the whipped-cream dispenser method, BTW. One method puts pre-brewed coffee into and dispensed from the whipped cream cannister (simple enough). The other method actually brews the coffee directly in the whipped cream dispenser using extra charges of N2O (the additional pressure infuses the coffee more, and also reduces brewing time), then the "sludge" is poured through a pour-over filter from the cannister.

Beer gas is a Guiness mix. You can get pure nitrogen from a draft supply place and that is what's best for nitro coldbrew. Definitely the investment in a kegerator and nitro setup is the best way to do it properly but is also a significant investment. Someone who homebrews beer is likely to have most of the gear and knowledge needed to do this already, but for most people it's a big curve.

What you made is carbonated coffee, not nitro coffee. I don't think that SodaStream makes a tank for nitrogen gas. You need something like the whipped cream makers or seltzer water makers such as from ISi. You then need to get the right sized nitrogen cartridges for the bottles. You can use the C02 or Nitrous Oxide cartridges, but they make larger bubbles. Pure nitrogen makes the smallest bubbles which gives the resultant coffee that creamy look and texture. The smaller the bubble the more it lets the coffee flavors to flood and surround your taste buds. The gas used, CO2, Nitrous Oxide, or Nitrogen does not change the flavor of the coffee, but it does get more of the flavor molecules in contact with your taste buds.

True "Nitro Cold Brew" is bubbly with Nitrogen, not CO2. Nitrogen is a smaller molecule making smaller bubbles making a velvety, almost creamy texture. It's a similar effect to N2 in Guinness beer. I used to think it was gimicky & didn't like nitro iced coffee, but now I do.

I would guess that the carbonation would destroy the flavor of the coffee after a short period of time. CO2 and good coffee flavor tend to not get along right?

Sirion Interesting hypothesis! We found that about 30 minutes after carbonating, the flavor declined drastically. But that was in an open container. We may try it with a closed bottle like you suggest. (But we are still cleaning coffee out our Soda Stream!)
