Especially when my tomatoes are ready, but right now, I'm all about cool lunches in summer. I eat bruchetta or a caprese sandwich all the time. However, a refreshing caprese pasta salad certainly ticks all the boxes of a great quick lunch, and I like to do a creamy balsamic vinegarette on mine. Mix it up and have lunch for a few days in the fridge, so easy!
Creamy Balsamic Vinegarette: You can double if you like it extra saucy.
1/4 cup mayo
1/4 cup balsamic vinegar
1/3 cup olive oil
1 teaspoon Dijon mustard
1 teaspoon garlic
1 teaspoon honey
1/2 teaspoon black pepper
Salt to taste
Salad:
8 ounces pasta of choice, cooked and rinsed in cold water (I used garden rotini)
Cherry or Grape Tomatoes
Mozzarella Pearls
Basil
Green Onion
