Run Away Rice, you are my hero. What is the pomelo extract for? These candies Mut Hat Sen- are $20 bucks in California for a small bag. I can now make them as presents. Thank you!

I can only find fresh lotus seeds in my grocery store, is there any difference to the preparation process? as in do I skip the low heat boiling and go straight to tossing with the sugar?

Nice, fresh lotus seeds are awesome! Try some seeds and see if you like the taste and texture. If it's too raw-tasting and crunchy, boil for 3-6 minutes depending on how soft you like it. If you like the taste/crunch as is, skip ahead to the step of marinating with sugar for 1 hour, etc. Good Luck!
