I make fish patties out of them. Chopped up fish, Italian bread crumbs, diced onions and bell peppers (sauté in butter first), an egg, Parmesan cheese, and your favorite seasoning, I use Cavendars but any seasoning is fine. Mix it all together really well, form into pattie, and pan fry. They’re really good.

I grew up listening to people say, "That fish is no good to eat" without either trying it myself or asking the important question: "Have you ever tried it?". When I started asking that question, almost universally the answer was, "no". My experience since is that almost all saltwater fish are delicious if properly prepared. I fix my sailcats just a bit differently and cut out every trace of red and fry them up. They're as good as any stream-caught channel catfish. This was another great catch-and-cook episode. Excellent content!

Appreciate this video, good catch when trout or reds aren't biting. I'll take the advice about not eating certain fish, but when a sailcat ate my live mullet I gave them a try. We'd hang fresh water cats from a big nail on a dock's post and used those skinning pliers. Prefer to cook with the backbone left in and pull the meat off at the table. Be sure to keep a roll or biscuit handy in case a bone gets stuck in your throat says Grandma.

Let everyone dig in and after the platter was low he let all the cajun ladies know. They ain't trust him since. He always was like that though eating green turtles, that man would turn a storm minnow into a sardine, no shame . He was the ultimate catch cook clean specialist before his time.

I always wanted to try a sail cat. Up here in north Georgia when I catch big freshwater catfish I hang them up by there jaw and cut their whole tail off while they are alive and their heart pumps all the blood out super fast and they die quickly and it makes the meat white as snow. It also makes a huge difference flavor wise. I really don’t like catfish unless they have been cleaned that way.
