INGREDIENTS
Mushroom Chashu
2 king oyster mushrooms, stems at least 1½ inches wide and 3 inches long
1 teaspoon kosher salt
¼ cup soy sauce
¼ cup sake
1 cup water
1 tablespoon granulated sugar
¼ teaspoon smoked paprika
1 ½-inch piece of fresh ginger, peeled and sliced into coins
2 garlic cloves, smashed with the side of a knife
2 2-inch pieces of scallions, white parts only, crushed with the side of a knife
1 tablespoon cornstarch
2 tablespoons vegetable oil
Kombu Dashi
1 1-inch piece of fresh ginger, peeled and sliced into coins
2 garlic cloves, smashed with the side of a knife
2 2-inch pieces of scallions, white parts only, smashed with the side of a knife
2 cups water
2 4-inch square pieces of kombu
5 medium dried shiitake mushrooms
Broth
1 tablespoon plus 1 teaspoon white miso paste
1-2 teaspoons chili bean sauce/paste, to taste
1 teaspoon soy sauce
1 teaspoon toasted sesame oil
¼ cup water
½ cup unsweetened soy milk, room temperature

Mushrooms are delicious and very healthy, buy for a pork texture I'd recommend soy meat. When seasoned and prepared properly it has an indistinguishable texture from pig pork. Mushrooms are usually more spongy.

lions mane mushrooms are perfect for duck or pork, especially when based then baked. king oyster is great for duck or pork when shredded and lightly fried. this is a great vegan moo shu duck technique.

The restaurant looked familiar then realized I ate their last year with a friend! We ordered a lot and nothing disappointed; the service was awesome, too. The bao is easily one of the most delicious items I've tried in a while (for fans of sweet/savory combo). It was so good, I picked up more 2 hours later even though I was still full (because gluttony is real).

@@jeremiahstephens9670 It's called Gokoku Vegetarian Ramen Shop and it's located in Studio City. Prices are affordable -- but that's subjective because I personally don't consider anything to be "pricey" if I feel the taste/quality is worth it.

im so thankful for all these new vegan options now. Ive been vegan since i was little i have a animal protein allergy. For years and years the only thing i could get was a salad plain .... cant trust dressings they almost always have eggs

My cat is allergic to animal protein, I had no idea it was a thing in humans. And for those of you wondering: no, I'm not feeding my obligate carnivore kitty a vegan diet. She gets special vet food with cut up proteins that her immune system can't recognize as being animal based anymore.
I will forever be obsessed with Yeung Man Cooking's Vegan peanut satay ramen recipe, it's on youtube and it's a forever favorite. Literally my favorite recipe I've ever tried, check it out if you love peanuty creamy ramens!
Japan already has vegan chashu substitute. It's called 'fu' and is made from gluten.

That looked great. I've never had ramen other than the store bought ones with the spice packet. I used to love them so much until all of a sudden I don't like the spice packet anymore. I need to learn how to make them better at home so I can enjoy them again. All those made me drool :)) and I can't even imagine how good they tasted.

I love this vegan broth recipe. I don't love western roasted mirepoix broth because it's so sweet. I prefer the savory umami bomb broth made with kombu, dried shitake and bean sprouts.

If mirepoix is too sweet, you probably used too much carrot. That's why it's so great in tomato sauce because it helps tone down the acidity!

I can't wait to incorporate them into my cooking. I already use miso paste basically every night with dinner.
The problem with Beyond is that the artificial smoke flavoring is so strong and fake tasting that it overcomes other flavors in the food that it is being used in.

They look soooooo good. I love ramen and have been trying to figure out the right spice ratio. P.S Rie reminds me of the french chef in Ratatouille.
Please go to Mensho in San Francisco. They have a vegan ramen (2 actually, but they rotate one and the other is on the menu permanently) and I have to say it's probably THE BEST. It's creamy, smokey, meaty, and so flavorful. Absolutely the best. :)
No lie that home made 🍜 is presented way better than other two.
The best vegan meat substitutes I ever had was from Vietnamese restaurants.

@@LadyVader33 Well I live in Hawaii. So maybe its not near you. It's more like a general statement. If there are Buddhist Vietnamese communities near you, the Vietnamese restaurants will probably have vegan options.

@@LadyVader33 Specifically look for key words such as "Chay" in menus, you can find very convincing "meats" and jerky made from tofu skin and dried mixtures of fermented fruits and herbs which give a taste and specifically texture that is shockingly like meat that can make you actually question if it is really vegan. Lots of options but there are always horrible tasting ones, you just gotta find the best place and be sure of any food allergies as they often use a variety of different fruits and vegetables to get that meat taste. Vietnamese food is very vegetarian and vegan friendly as there isn't a lot of land based meat in our diet due to the little land we have aside from the very popular recipes and ones that specifically require fish sauce, which is a staple condiment in vietnamese cuisine but surprisingly isn't always universal. Most people in the country use chili salt, or fermented bean sauces, there are lots of daily meals where there isn't any animal protein and we have times, mostly during temple where we eat vegan for weeks or months at a time.

I love how Rie is always honest and says exactly what she is thinking instead of sugar coating it. Also, who makes the decision to subtitle certain people who are talking English? It's kind of annoying that you pick and choose who you can and can't understand. So you think it will help others by giving certain people subtitles.
I think what I love most about vegan restaurants is 98% of the people who open them are really skilled or dedicated to perfecting their skills and passionate about creating delicious satisfying food. It also feels really good to eat, it’s hard to describe how different you feel after a vegan meal. It’s really nice. I’ve had the most incredible vegan meals and I wish I had gone vegan a decade ago like my daughter
I make vegan ramen all the time! Tho I make vegetable miso broth, which is already vegan lol and use eggless noodles, my toppings are always vegetables so I was pretty sure she was gonna like it!

trust me 100% it can.... i went to this restaurant here in Calgary alberta called "nans noodle house" and i am blown away to this day by their vegan food. Im not being dramatic when i say i genuinely think its the best food ive had in my 28 years of life. And ive only been vegan for 3.5 years so that's A LOT of animal products :P.

I love that beyond meat is becoming such a nice alternative for ppl. I personally really can't deal tho for some reason. I've tried beyond burgers and it just exudes such dog food vibes that I would much rather just get a regular veggie burger.

I'm not a vegetarian but I prefer beyond meat burgers because let's be honest, who wants to eat grade Z fast food meat. That being said, I do love a good veggie patty.

I'm not vegan although I try to eat less and less meat (environmental reasons, health reasons, also, the less I eat the less I crave it, I noticed; but WHEN I eat it, I want it to be worth it, high quality, a great steak, a great burger etc.) and I have not bias against vegan food in general, although I dislike the heavy reliance on soy and stuff like Seitan, i.e., pure gluten, and other "cheap" substitutes in vegan food culture and overall a lot of the stuff is almost by necessity very highly processed. A slab of steak is just meat, done. Fake steak etc. are full of stuff, chemicals, very processed etc. No matter how you stand on gluten, just the idea of eating a big chunk of pure gluten feels not great to me. Also, actually don't like the taste/texture. And I try to eat less processed stuff, not more. I much prefer tempeh (just fermented soy beans, you can make it yourself at home, also can use chickpeas etc.) to a lot of other vegan proteins. Almost anything fermented is great. Great flavor, not trying to be meat but stands on its own, and way better texture than tofu (although I had some DELICIOUS fried tofu recently). Just made a decent vegetable broth just for heck of it, to see if I can. Not a bad start, but can definitely be improved. And honestly, my FAVORITE ramen in my local ramen shop IS vegan, with a mushroom-based broth and miso tare. The noodles are not vegan afaik but can be made vegan (and any ramen noodles I make at home are vegan by default because I just use flour, water, kansui). So I'm not at all surprised they managed a great vegan ramen. The use of vegetables and fruits like pineapple is really intriguing. Using Beyond Meat almost feels like cheating. I also like it and use it (or other pea protein-based "fake" meats) more and more in my cooking. Although I try not too much, again, highly processed.

Went vegetarian for 3 months. the one problem when I tried to become vegetarian, i can never be full at all and it drives me crazy. and it's crazy expensive.
