Caldo Verde Recipe: A Medieval Party Soup!

Here's the full Caldo Verde soup recipe ➡
Servings: 4
Time: 40-50 minutes
Special equipment: Hand blender or blender
THE SOUP:
600g potatoes
1 large onion
260 g collard greens or kale
3 garlic cloves
2 bay leaf
50 ml olive oil
1 cube chicken or vegetable stock/bouillon
1 chili of choice
1 ½ l water
Salt
White pepper
THE CHORIZO MIX:
300 g chorizo
Two tbsp olive oil
Mint leaves
Fresh oregano leaves
A splash of port wine
HOW'S IT COOKING:
1) Peel and chop onion and garlic in rough fashion
2) Peel and cut your potatoes into cubes
3) Transfer all three ingredients to a large pot and cover with water approximately 1 ½ liter. That's the base of the Caldo Verde.
4) Add bay leaves, chili and bouillon cube.
5) Bring it to a boil.
6) Let it simmer for approximately 20 minutes.
7) Meanwhile rinse and slice the collard greens. They have to be very thinly sliced like in the video.
8) Place the sliced collard greens in a large bowl and cover it with cold water and set aside.
9) When the base of the soup has cooked for 20 minutes, test if the potatoes are slightly overcooked.
10) If so, blend everything in a pot together with a hand blender to a creamy soup. It is not a problem if it seems a little too thick as the collard greens that you will add LATER, will make the texture a bit thinner.
11) Now taste the soup with salt, white pepper and olive oil.
12) Add the thinly sliced collard greens to the pot and let it simmer over low heat for 10 minutes.
13) Meanwhile chop the mint and oregano and cut the chorizo into rustic cubes.
14) Now heat up a skillet with some olive oil on high heat.
15) When the oil is hot, add the chorizo and fry it til it's nice and crispy.
16) Then add the port wine and turn off the heat. Let it simmer on the pan while is cooling down for 2-3 minutes.
17) Now add the herbs to the pan and stir a bit til it's all mixed together.
18) Now, in a deep plate, place the chorizo mix in the middle and pour the soup around it.
19) Serve with a nice piece of Papo Seco (Portugues bread roll)

Love the caldo verde! ❤️ Of course Amelia, you should try bacalhau recipes (there's lots to choose 😅) and some more finger food: peixinhos da horta, pataniscas, croquetes (com alheira) - someone will love this for sure. Then the classics, arroz de polvo and cozido à portuguesa. After this, you name is Amélia (with an "é") and you're Portuguese! Ahhah 😘😎🤗

nice one :) you can keep it simple... potatoes and onions, boil, process it, add the cabbage (couve portuguesa / couve galega), boil a bit, serve with chouriço and broa
For the winter you should try, "Sopa da Pedra" (Soup of stone) from Almeirim. It as its own story also.
Loved the part with reverse play. Almost like the Christopher Nolan movie "Tenet" 😆😆😆

I have been eating my mother's and grandmother's Caldo Verde my whole life. Probably my favorite peasant dish of Portugal. Nice touch with frying the chorizo first with the herbs. I am going to have to suggest that little tip to my mother. Great editing by Joen as usual as well. Love the new channel. I'll be watching as always.

I had no idea that this was such an important dish in Portugal! Great channel you have! I have a santoku with Granton cuts too...but it's not nearly as fancy as your Damascus steel version. The reverse potato cuts was a fantastic editing touch of humour, too! hahaha

Great looking soup. My only quibble is that I would like to see the chouriço in thin slices, it's traditional and looks better in the spoon.

Thanks for your comment. I actually disagree. I love nice crispy chunks of chorizo and I find them very rustic and decorative which is just my humble opinion. But of course you can always cut the chorizo as you wish for this recipe. You can also boil it in the soup as you traditionally do here :)

Fantastic, usually I boil the chouriço together but your twist makes it very interesting definitely will try. Now I really want some caldo verde ASAP….What about a bacalhau com natas next? And desserts of course

In portuguese we call it chouriço.
Good work. But you should use white potatoes. The soup becomes creamier

For keto recipe that a good idea. I would even use some heavy cream for that.

@@howsitcooking2478 turnips are for a good creamy portuguese soup full of vegetables. And you can use the greens (nabiças)... sauté with garlic, boil them... :)

Yes Portugal actually played a big role in the invention of the piri piri sauce as the brought the peppers from Mozambice to India and then back to Europe’s

Mine where bought like this from the store as I couldn't get the collard greens whole. But normally I would use a super sharp knife to chop it. U can also unse a mandaline iron is you have one.

Knor is cheating, but I like your channel, many people in Portugal use knor but I feel this is cheating
