Without oven make cookie

I made these cookies 3, 4 times. Each time it came out so well. Thank you so much for the recipe.

I baked them a few days ago and here's the verdict: 1. Even though I added sufficient vanilla essence, I could taste and smell the rice flour, which I didn't like. So, maybe reduce the rice flour and substitute with corn flour. 2. Yes, they are quite crispy and sort of melt-in-mouth, but to me they taste more like nankhatai than butter cookies. 3. They do NOT take 20 mins to bake. Mine took just 12 mins. 4. I let them cool down and stored them in a zip lock bag. It's been 6 days now and they still haven't caught on the humidity. I have tried the butter cookies (with eggs) recipe from the gracious treatz channel twice and although they turn out much lighter and tastier, they get affected by humidity immediately. 5. The trick about making logs, freezing them and then dicing them is pretty neat. It helps avoid a lot of wastage compared to piping. A special thanks for this!

@@rucha1814 they don't rise or even increase a lot in size after baking. But, somehow that doesn't matter in butter cookies. I suppose the air that gets incorporated while beating the sugar and butter is enough to make them light.

Recipe looks great. First time when I had to keep log for 2 hrs I kept in freezer. Second time covered in parchment paper( overnight) do we need to keep the logs in freezer or in fridge?

These cookies looks simply gorgeous ! I never saw anyone using rice flour for cookies. I'll definitely try this.
