They are artists, more than builders. The whole would have been dug using an excavator, and there is a team working upon this. That said, its still really impressive though.

They say South America. This is certainly clay and sand, not mud. Sicne clay holds well, they have no rpoblem digging vertical walls and even overhangs, and it doesn't collapse! You cannot do that with regular soil.
