Buffalo Wing Popcorn

Today I want to show you how to make Buffalo Popcorn. This snack blends the spicy tangy flavor of a buffalo chicken wing with the slightly sweet crispiness of kettle corn. I have to warn you, this stuff is addictive. This sweet spicy salty popcorn hits all of the taste buds and is sure to be a great hit for guests. You can even make this stuff as a gift for the holidays. I honestly don’t know why they don’t make this stuff commercially.
Checkout the recipe on my new website:
www.flavorlab....
Ingredients:
1/2 cup [60 grams] - popcorn kernels

2 Tablespoons [30 grams] of butter
1/3 cup [100 grams] of Frank's red Hot

few dashes of Worcestershire sauce (optional)

Finally!! A broken down explanation of what happens when you coat popcorn and why you need to be quick and diligent. Everything was easy to understand and honestly game changing as I am starting Pippity Poppity, my own popcorn business in a few weeks and had trouble understanding why my coatings made my popcorn sticky and whatnot. Thank you truly!

1:36 You've got a bit too much oil in the pot you don't need that much and it makes the popcorn greasy. I love the concept but it's too much work. Boiling sugar to 250* takes forever and then desiccating in 250* oven is silly for the volume. This is a very edge case novelty, especially considering the cleanup

  • @jjones9909

I have to agree with the other commenters. Pouring hot liquid over popcorn never works out well. Personally, I use room temperature buffalo sauce & olive oil instead of butter. Also, much of the lid condensation can be reduced by leaving a vent for the steam to escape or using a screen.

So instead of pouring the sauce over the popcorn lined on the baking sheet and stirring it.. do you think that pouring the sauce over the popcorn into the same pot you popped them in and then shaking it up well would be a good method of coating? And then pouring the popcorn out onto the baking sheet to go into the oven? I get kinda intimidated of accidentally breaking the popcorns by stirring it too much.

Hey there! I'm upset no one has answered you yet, but I'm here! It's actually quite simple. When the hot oil touches the kernels at the right temperature, the water residue inside the not fully dried kernels starts to rapidly expand and boil, cooking the starch of the corn and breaking the outer shell, expanding and pulling the starch with it. Basically when it gets really hot, it breaks and turns inside out to be crispy
