This concludes our part one and two videos on feeding a large group on a budget. I sure hope you enjoyed it. Pork Picnic Meat:
10 lbs picnic mean pork shoulder
2 Oranges
2 Limes
2 onions
4 cloves garlic
4 bay leafs
Liberal amount of season salt.
Add 4 cups of water to your roaster and set to 300 degrees. If you don’t have a roaster you can use your oven and a roasting pan. Just cover it right with foil.
Roast low and slow at 300 for 6-8 hours until you can pull the bone out with no resistance. Remove orange, lime, and bay leafs. Shred in juice and serve.
Gooey Butter Cake
1 yellow cake mix box
3 eggs
1 tsp vanilla
16 oz powder sugar
1 block cream cheese
2 sticks butter (unsalted)
Preheat oven to 350
Crust:
Combine yellow cake mix, ½ cup (1 stick) melted butter, and 1 egg. Beat with an electric hand mixer and form one layer on a lightly greased glass baking dish.
Filling:
1 softened block cream cheese, 1 tsp vanilla, 2 eggs, powder sugar. Beat with electric mixer until smooth. Slowly add in melted butter a little at a time and beat in slower level. Pour on top of crust.
Bake in oven at 350 for 40 min until it’s still giggly in the middle. Don’t let it get to the point of being firm. Let it cool and rest for an hour before serving.
