    So sad for your loss. When I was 18, I lost a younger brother. My parents were inconsolable. After a few weeks I had to remind my mother that she had 2 other children who were still alive who neededher. I think it helped her a little bit.

    I made the grilled chicken pasta salad. I used 1/2 a box of short pasta, 1 chicken breast (cooked and cubed), 1 can corn, and 1 tomato (chopped, recommend 2). For the dressing I did 1/2 a packet of ranch seasoning, 1/8c mayo, 8 oz sour cream (the entire small tub), a splash of milk, and a spoonful of minced garlic. Turned out DELICIOUS! I served it on a plate of chopped romaine lettuce. Thank you for giving me such a good recipe! I always get so many ideas watching your videos. For those of you who are picky eaters like me, the ranch dressing was not overpowering. Definitely kid friendly meal

    Thanks for sharing. This is how I was taught to cook/plan 50 years ago. Both sides of my family did this. I was shocked when I was in college and none of my friends had ever heard of or thought to cook once, eat two or three times with same basic foods but changing presentation! I had one roommate that thought eating leftovers would poison you... 😂

    I love the double cooking concept. It takes meal prep to a whole new level. Lately I've been using pickle juice to brine my chicken. I really love using the juice from the Aldi refrigerated pickles! Yummy!

    I actually mixed the leftovers of the pasta salad (minus the lettuce) and the mac & cheese, and popped it into the oven for a cheesy ranch chicken pasta bake for one more meal. It was actually delicious!

    That’s amazing all that food for $23. We have no hope of making that where I live in Australia for that price. The Aldi is so inexpensive in the USA compared to here. Our three major supermarkets are Woolworths, Coles and Aldi I am about an hour from Costco. A trip to Costco around every couple of months I normally am able to buy pantry staples. I am very lucky though I have a vegetable garden in which I can grow a few items. I am going to try the chicken brine today.

    I agree that brining chicken is delicious. I have also had good luck “velveting” my chicken breasts. You sprinkle baking soda on them, let them sit for about 20 minutes, then rinse. This is a technique used in many Chinese restaurants. When I was young my mom always salted the chicken and she said it was a way of “koshering” the chicken because it would draw the blood out of the chicken. Great video with great suggestions.

    I’ll definitely be trying the brined chicken! I also always add a tiny pinch of nutmeg to my bechamel sauce.😉 Love the Cook once Eat twice. I do this with ground turkey. I brown it up with minced garlic, salt and pepper, use half to make sloppy Joes, and add ground ginger to the other half to do stir fry.👍🏻

    Hi Mindy! I love your budget videos and these ideas today definitely helped me. My only problem is that I live in Manitoba and to buy that same amount of chicken breast cost me about $26. This makes it very difficult to get my groceries as low as you are able to.

    I was at my Aldi this morning and wheat bread went up $0.38.The hamburger buns were $0.89 which we're up $0.04.I feel that walmart is about the same price now.Your dinners look really good.

    Everything has gone up so much recently. It seems like every few years , we see the talking heads lament about rising food prices and inflation- but I’m 45 and this is the first time in my life I’m actually noticing and getting sticker shock. Butter used to go on for 2.99 now it’s like 5.99 The good burgers at Costco were 19.99 they’re up to 31.99 😮 And bacon.. was 12,99 now 19,99 . And everything else seems to have gone up a buck or more. I feel for the people who struggled with putting food on the table before , because it’s insanity. Not to mention gas being above $2 a litre.

    I lost my job after 14yrs of service. I never received unemployment either. The excuse for that is there behind in there services. Some of dishes I never thought of. I do love the Roman dishes. Another one my kids like Roman with chili mixed in. Another cheap meal is ranch chicken. It's just pasta, chicken and how ever u do the ranch. Salt n pepper. They love it.

    The Aldi by my house hasn't had fresh chicken in 3 weeks. When they do get it in it sells out right away. Also out of all hotdog and hamburger buns. The freezer section is 80% empty. If I solely depended on Aldi right now my family would starve

    Hello, Please do a video for people that don’t have much time or money. I bought these black plastic containers with a top on them from Dollar Tree. I got two of the for $1.25. I bought about twenty of them. One of my meals is to just boil eggs and peel them. I place them in the largest of the three containers. I put 3-5 eggs. I put store bought Aldi potato salad in one of the small containers. I put canned pineapple chunks in the last container. This is very fast. Everyone can eat their meal even when everyone is on different schedules. These containers are safe to wash in the top rack of the dishwasher. I belong to the minimalist group on Facebook. This is from many low income people. One lady was pregnant and had two small children. She also worked a job and had a very small kitchen. I would like to refer your You Tube videos to this group. Many have very little time and very little money and very small kitchens. Thank you for considering doing this. Thank you for your videos.

    if you go to a ethnic store, you can find limes pretty cheap. And they sell so many for a flat fee.

    What does soaking the chicken in brine do and what does soaking the lettuce in vinegar do? Looks yummy!

    Brining helps make the chicken flavorful and moist once it’s cooked. Adding a splash of vinegar to my produce while they soak helps clean them.

    Not sure, but perhaps the roux didn’t have a chance to fully incorporate and dissolve with the milk. Could have also been the kind of pasta.

    We do not have good luck with aldi chicken breast. They are always spongy and when you cook them they are all water. It's makes aaround half the meat that a package from walmart does.

    Silly question... can I mix butter, cornstarch, cheese, (or) does it have to be butter, flour cheese?

    If you’re using cornstarch as a thickener, I find it works best to make a slurry with water and cornstarch and then adding it to a soup or sauce to thicken.
