Bubble and Squeak - A British Classic!

Did you know Bubble and Squeak has been a family favourite since the 1800's. This is a true British Classic.
When ever i am making mashed potato i always like to make a little extra so i can make this the next day. So tasty and a great way to get the kids eating cabbage too!

Ingredients for the Bubble and Squeak:
700 g (3 cups) leftover mashed potato this doesn't have to be exact
200 g (2-3 cups) leftover chopped cooked cabbage again this doesn't have to be exact - I like to use savoy cabbage
2 tbsp butter
2 tbsp veg oil
1/4 tsp each salt and pepper
Serve with:
Grilled back bacon
Poached Egg
Chopped fresh parsley

Oh i agree, I mean I've always wondered how they came up with the name Spotted Dick 😂🤣 were they eating and suddenly thought this looks like a dick with spots? I know! We'll call it....SPOTTED DICK! Lmao on another note, I've tried it, and not too shabby lol.
In Ireland we call this dish Colcanon, similar recipe. Love your recipes. 💚

After night shifts used to go to a somewhat dilapidated caf near the train station where i live for their killer bubble & squeak. They didn't need to spend on decor as the railway maintenance crews in hard hats and day glo frequenting the place was the best advertisement for good grub they could ask for. It's gone now but was the best bubble & squeak i ever had.

Couldn't beat the old fashioned cafes for their fry ups / bubble and squeaks/ pie and mash etc etc before the health and safety brigade came around to close them all down. I wouldn't mind! But I've had more bugs from these so called hygiene cafes/ come restaurants than I ever had from a so called greasy spoon cafe.
What an absolute delight. Thinking breakfast too.

Same, i didn't even know it was a real meal
We are Americans, but we wanted to get up early and watch the coronation of Charles the third and I saw this in traditional British breakfast dishes, and I didn’t know what it was.😂 I love mashed potatoes and cabbage, so I probably will make this.
I do it as my mum did with leftovers from a Sunday roast, mashed up baked potatoes spring greens peas and and carrots (any veg left over). So this may include a little gravy too which all adds to the taste.
Love the addition of egg and bacon makes me hungry now
I’m from wales and we always called it “fry up” ... mashed spuds and any left over cooked veg from a Sunday roast or Xmas dinner. Done in a frying pan on stove top. The poached egg is a great idea!

R M, I guess it's a local thing, as I'm from Wales too and we always call it, "Bubble & Squeak," and a "fry up" is a full, fried breakfast of eggs, bacon etc. Call it what we will, though, it's still delicious, heh? ;-)

also try Yorkshire puddings delicious with roast beef.
Looks so nice. I do it slightly different. After I get the crust on the bottom I fold it in. I keep doing this for about 25 Mins until the whole dish is a mixture of soft and crispy bits. Soooo nice
Mashed potatoes!! Who has mash with a roast dinner? It's the crispness of the roast potatoes that makes a true bubble 🤗
The way my mum used to make this was cook on high so the mixture slightly burned on the bottom scrape all the yummy brown bits and turn the potato mixture in wards taking the burned bits with it. Your recipe is more of a potato pancake
Absolutely love bubble and squeak a total classic way to use up leftovers and that poached egg looked amazing the colour of the yoke was perfection 👍👍🥚🥚

Looks good, but it needs to be a full Sunday roast in it! Along with the mash, also have chunks of roast potatoes (if there’s any left 🤣) all mixed in it too!

Ohh i didnt know thats how it was meant to be. My family have always done, leftover roast potatoes cut up, broccoli, cabbage and sausage or bacon then fried with loads of butter, x

Try putting the roast spuds through a mincer and use the crispy bits as well. In the past we've added left over mashed swede, minced roast parsnip, brussel sprouts (not too many as they overpower it) and peas not minced

@@kevodowd5282 My mother never bothered about any of this, just mashed everything up, fried it in hot {oil, butter, bacon fat, lard, anything that we had} then served it up with crispy burned bits on the outside. Best thing that I ever ate. xx Clogged arteries? I don't know, will let you know when I get to heaven xx

I have just spent half an hour refreshing my memory of bubble squeek. Cheese, egg, garlc, peppers, etc., etc., etc., What a load a poo poo. I can remember my dad mixing cabbage and mash, shucking it into a frying pan with some beef dripping. That's it. Why on earth do these idiots on YT try and outdo each other by adding everything except arsnic ( I can't find that one). I don't mind the odd brussel sprout, pea or carrot- why not. This is the ONLY video on YT that's REAL bubble and squeek - apart from the lack of dripping. Good on yer girl, have an MBE on me.

Lodge are the best brand, whatever size you like to use. 12” is pretty normal, some do a few, from 6”-14”. Look up how to cure them properly from the beginning, and they’ll be non-stick, and don’t ever use soap on them, clean them otherwise, heat will kill any germs anyway, boil water in it if you need to clean any residue after cooking , and thinly coat with oil after use and before putting them away, and they’ll do right by you forever. Southerners in the US have the best technique for curing them. Takes time to thinly oil with coconut (handles higher heat than olive oil) and buff the excess off, heat @ 450°-500°F for an hour (it will smoke a lot, but that’s normal) cool with oven off, and repeat a good 5-7 times, but it’s worth it. Scope some vids...

I heard adding a bit of vinegar to the poaching water helped to bring an egg together. That, and using a fresher, newer egg.

I suppose that parsnips, turnips, or rutabagas (Swedes) could be used instead of potatoes? Living in America with Welsh and Irish roots.

The thing with Bubble and squeak is there are no hard rules as to what you want to put in it as long as they're mostly veggies. Like all the best recipes in the World it was borne out of need by poor people putting what they had together.
Looks good. Though I think I'd prefer a scrambled egg.
I can't wait to make this. Mashed potatoes and cabbage...with toppings...how can you go wrong? But...as concerning your British Classics playlist: I would love to see your version of a chip butty.

Never used mashed potato before, put potatoes through a grater, mix with egg and flour, onion, garlic, salt, pepper, roast meat and mixed veggies, fry them up like patties. This is how I was taught the recipe as a boy in Western Australia 🙏
What I find sad is the rumor that R&B legend to be Big Sean steals peoples socks from their dressing room or locker room whenever he performs.

Bubble ( never Bubble & squeak ) is a London thing, traditionally made on a monday using leftovers from a sunday roast. My ex-boss ( a yorkshireman ), reckoned it was disgusting but thought that black pudding was delicious. Strange bloke !

The version I eat does, but there are no strict rules. This isn't snobby French cuisine!

Nothing like any Bubble & Squeak I've ever eaten! Mash?! Grilling?! Really?!! Nope. Use crumbled roast spuds - MUCH better texture & flavour. It's supposed to be pan-fried, crisped up Sunday roast left-overs, so avoid the grill. Use 50% potatoes & whatever left-over veg you used for you meal (sprouts & fried onions work very well with it, too). Fry the mixture off till golden brown on the bottom, then break it all up & fold the mixture in on itself so every chunk has a crispy coating & all heated through evenly. Serve with cold-cuts, pickles & mustard. Heaven.
