You should study botany, chemistry (as one of the papers in any semester and zoology (as one of the papers in any semester) to further apply for some entrance exams.

Scope of Botany is wider than EVS at BSc level. So, you must go for BSc in Botany. In BSc Botany you study Ecology as subjects so you can switch to EVS in MSc later also.

Yes. For IFS, Botany is a very suitable course. For IFS, "Candidate should hold a Bachelor’s degree with at least one of the subjects namely, Animal Husbandry & Veterinary Science, Botany, Chemistry, Geology, Mathematics, Physics, Statistics and Zoology or a Bachelor’s degree in Agriculture or Forestry or Engineering of a recognised university or equivalent. Candidates appearing for their degree examination (with prescribed subjects) can also apply. If they qualify on the result of the written part of the examination, they have to submit the proof of passing the required examination along with their detailed application form to be filled in at that stage."

It depends upon the company or job chosen. Many biotech companies offer starting salary of 30-40k pm and with experience and promotion it can go as high as 1-2lac pm. But it is a subjective question.
