I shot at an incoming FW190 with the 30mm AP/HE belt of my BMP2 and hit the engine and cockpit like 5 times, "killed" the plane but then he was still able to drop bombs and kill me as his plane crashed behind me While sometimes I can easily pilot kill an FW190 with 7.62mm bullets

To be fair bullet proof glass can withstand a few rounds, sure. But if you full auto a cockpit it'll go through soon enough, even with 7.62mm. by warthunder standards it shouldn't because armor degradation isn't implemented but Helios are too tanky the most of the time anyway. I've been killed by "dead" helicopters more than i have been killed by live ones

No one uses the drones properly we all use them to harrass helis
