You can't mention bbq without brisket. It is what grades modern day pitmasters on their level of expertise. It's a cut that you take great care of but isn't as hard as some might think.
You will see in this video that a beginner or pro can smoke a tasty brisket with a little time and effort.

    @Carter's BBQ, It looks like you did a good job cooking that big brisket . I enjoyed the walk through , and step by step instructions . I cooked my first brisket a few weeks ago , it was a small one . My cook didn't go as well as yours , my fire management skills was lacking , the brisket was tough , so I realized I need to put the brisket back on the grill and continue the cooking process , eventually I got it tender . I will do another brisket soon , it will be much better .

    Thank you sir! I mostly used apple especially for pork. I may use oak with apple for beef.

    Great vid! What would you say was the total cook time for this brisket? I'm getting ready to make my first one next week that's roughly the same size.

    Thank you Sasha! My cook time was about 5 to 6 hours with a little over an hour resting time. Your time will very depending on the smoker, weather etc. What are you smoking it on?

    @@CartersBBQ216 I just got the Pit Barrel Junior, which is slightly smaller than the original PBC. I'm thinking perhaps it'll take a bit longer, so I'll give myself around 10/11 hours total. In case it comes out early, I'll just rest it for a longer period of time. Hoping that'll work out. Or do you think that's too much time based on your experience? Thanks again!
