    I do the exact same process you’re doing however once I’ve cooked it on top the stove with all the goodies I take it out of that put it in the oven for an hour and a half and it is so delicious. Oh my gosh the last 30 minutes in the oven I take the lid off and let the meat brown and makes the sauce and the vegetables brown and caramelized and I cooked Leave the juice in the pot and I cook my cabbage on top of the stove while my cast-iron pot is cooking the meat with the vegetables and onions and carrots, so they all caramelize then you mix the two together and it is to die for and yes, I am half Irish
