I know we all keep saying it, but Yannis is the hardest worker I have ever seen. It's not just that he works hard, either. His unfailing willingness to jump in and lend a hand wherever it might be needed and his attitude of eagerness to learn is just remarkable. I do hope someone is translating some of the comments so that the amazing Yannis can see how much all of us viewers admire his work ethic and his personality. Here's my poor attempt (using Google translate) to communicate some of this in French: Vous êtes un travailleur incroyablement acharné, Yannis. Nous sommes tous très impressionnés par votre rapidité à acquérir de nouvelles compétences. C'est un plaisir de vous voir faire partie de l'équipe sur les vidéos. Bien joué, Yannis!

By the way, Billy, kudos to Alex, but I LIKE your videos and didn't realize how much until you came back to it this week. I started watching partly because of your technique. It's more 'homey'. Like I'm hanging out with my buddies. It's like the difference between a home made meal and going to a restaurant. I just prefer a home made meal. ☺ Thanks for the dailies, I know it's hard work, but we appreciate it.

I think the most amazing thing is when you deconstruct old techniques and see how incredibly durable such simple materials can be. Our seventies kitchen cabinets where so strong I got an impact driver stuck trying to get them off the wall. Apocalypse proof. That wall building technique is amazing.

My guess on the small hole in the wall is where parishioners or other village people could come to 1. Get a meal prepared by the nuns or 2. Give donations of bread or other provisions to the convent. It is an enclosed area and the nuns could remain private behind the walls. Just a guess.

Another great episode! One can easily picture the wall going up all that time ago, with smiles and camaraderie shared amongst a cluster of men likely not so different from Yannis, Billy, and Simon. I must say, seeing that black void of the ceiling was unnerving. I'm glad Simon's eyes only found a steel RSJ beam and not the desiccated feet of a Nun sealed up behind the wattle and daub for 2 centuries. After all, it's not the kind of fate a religious order of sisters would wish upon one of their own, even if they did discover her worshipping another god in secret; a much older, earthen god from the forests of her childhood home in southeastern Europe (before Napoleon's forces orphaned her). I'm also glad she didn't turn her head towards the light with a sound like dry kindling as her mud and straw-dusted lips shriveled into a smile over blackened gums and whispered, "Merci. Merci, angliche..."

Would really love to come and give you a hand. I really enjoy this sort of renovation work. Always look forward to seeing what you uncover and restore next. In the office part you are working on now, you could possibly keep the middle section of stone wall exposed. Box in at the top for the AC pipework, and panel the bottom part to waist height. Put some spotlights in the underside of the top boxed in section to illuminate the wall and maybe some nice glass shelves. Cheers for the content! Keep calm and "Crack On"!

I think that there is exchanging of labor. It makes a lot of good sense. I think Yannis has become like a family member. There is a possible trade as well. His labor for all his needs. Perfect. It’s a small community that shares their labor. If they are all of the same mind and heart it’s very efficient. BUT it’s really none of our business how they work things out between themselves. 😊

It's going to look so nice! But, I watch the demolition thinking of the workers in the past. And feeling a bit sad to see their work being destroyed. How hard they must have worked to put up the walls, without the benefits of electricity and modern tools. Possibly standing on rough ladders, or wooden scaffolds. Yet they built walls that withstood a few hundred years. As Billy pointed out, the basic method is the same as now. Amazing. It's good to have it on tape, so future generations can see the materials once used.

That Yannis is one great worker. Watching every day from Kentucky. Like the idea of learning a little more about Yannis.

That will be a beautiful feature wall with the plaster and old beams! I was amazed at how much rubble was used in building the wall and how hard that must have been to do that ! Great job guys!

I never realized that Simon was leaving. I understood that his home was in France and that he was living in his trailer until his farm house was renovated. I have grown fond of watching him as well as Yanis work their magic at the convent. Is Simon coming back ???

Yannis makes me tear up in a good way lol. He’s so happy to be there even if he’s sore or anything else. He hasn’t missed a day yet.

Bruneau just came to stay and he told me that they finally demolished the church at Ernée and they didn't save the nave/alter of some of the statues or doors. Even the caps on the granite collumns went to landfill, how sad is that. Bruneau was away when they did it or he would have tried to retrieve some of the sculpted wood and stone.

What a job that must have been to in fill those walls! Especially without the lift and other tools you have today. Very interesting to see how it used to be done.
