    The door is deliberately made so that it doesn't seal and this is because the steam has to be expelled efficiently. If you look closely, you will see that it has a rubber seal at the top which doesn't go all the way along the front and leaves a gap. Don't worry, the design boys knew exactly what they were doing.

    The door gap does not affect heat retention in the oven. This is another way for the oven to vent excess moisture as the manual states. Your regular oven and microwave have vents also. The excess moisture coming from them is not noticeable as from the smart oven. The light comes on 10 seconds before the food is done. Also stated in the manual.

I’m always torn wether to use the slow cook setting or just set my own temp and time. I haven’t tested it side by side yet.

    Question for u…and by the way ur crumb tray looks brand new compared to mine lol…and I don’t use it nearly as much as you seem too. :). But when you airfry frozen stuff (assuming ur do) do u find that the stuff doesn’t come out as crispy as it should even if u follow the product instructions exactly? I seem to find that the stuff doesn’t come out crispy like it should. Example last night I did firecracker shrimp. The shrimp are already pre breaded and frozen and instructions say to airfry at 400 for 8-10 mins. I did for 10 mins and flipped half way as directed and made super was on super convection but they still didn’t come out nearly as crispy as I would have expected them to. And I’ve found this a lot that it never seems to be either hot enough or maybe not for long enough to get this crispy results…. Have u experienced this? Any input if so?

    When to Roast vs Bake? When making foods that have a solid structure (vegetables or meats), you should roast the food. If you’re making foods that aren’t solid before cooking (cake, bread, etc), you should bake the food. While both methods use dry heat, the process and the temperatures can vary due to the structure of the food. Roasting gives more firm foods a crispy outer texture and caramelization, whereas baking is better for foods that start out soft, such as batters and doughs.

    Loved this review on the Breville Pro. I am thinking of upgrading from the Breville Smart Oven Pro. The proof cycle i your oven, what is the temp for proofing bread/pizza dough? My large Jenn-Air built in oven won’t go below 200F, I need a proof cycle to be between 85-95 degrees F. Will the Breville Pro go that low on the cycle, and still allow room for the dough to expand twice in size?

You mentioned the lower heating elements not working properly and I was wondering if you reached out to Breville about that or heard anything else about the issue? My oven pro lower heating elements went out but I don't know when because I can still bake things that are not to thick like dense casseroles. I only noticed because I made a casserole once and the top cooked but the bottom was not as cooked and when I made some toast, I rarely use this function, to test them only the top side was toasted.

    We had a Gourmia from Costco that we use almost every day to cook things like Bacon or Sausage for breakfast. We want to get away from it because it is coated in non-stick finish they say is toxic. I wonder what this interior finish is on the Breville, is it also a "non-stick" material? The other concern I have about this as an air fryer, for things like bacon how hard would it be to clean? Is bacon and sausage going to create a major mess to clean up? I see you would have to use the roasting pan for things that drip...but the interior could get nasty from grease splatter?

  • @homecookbasics

    @homecookbasics

    Not sure what the coating is on the inside. I hope it is as durable as say an oven interior but do think its not nonstick but a smooth surface. Yes it can get messy in the oven. I find if your using good oils it wipes out pretty good, if your using seed oils that stuff sticks to everything and doesn't come off.

    We've had ours a little over a year now. The energy saved by using this over the main oven is awesome. It doesn't heat the house up much and cook as long, which saves on AC bills in the southern summers. I also use it to cure polymer clay, even the finicky Cosclay, with it's phase cook mode and it's seriously the best oven for this. Cooking and crafting made this one a worthwhile investment and in that year alone, it's probably almost paid for itself with the electricity bill. We also use ours daily and it is getting a little rough inside. I've cleaned the drip tray and door with bar keepers friend. It took the cheese drip char and discoloration at the door corners right off. Still not sure how to really deep clean the black coating, but it hasn't caused an issue. I want to try dehydrating with it, but I've never dehydrated anything and it will probably be best to wait until winter again anyway.

I just unboxed my Breville Joule Pro and am trying now to connect to Google home but ended up watching this video. I’m actually glad the other caught fire. I’m excited to use my new one and I love the app with all the NYT recipes. But yeah, don’t ever use foil. NIH studies prove that linoleic acid oils aren't bad for our health, yet I still try to avoid consuming it often. Frying is a sure way to consume a bit more than usual. If you weigh the oil used before and after frying you will notice it's not as much as people make it out to be. In any case I prefer using oils that have the least linoleic acid: Olive oil, Coconut oil or just clarified butter. Using more saturated fats isn't a wise choice either since cardiologists see it every day in their practice to affect cardiovascular system and digestive system (liver) Olive oil is the clear winner for all applications but you're also correct in the break down of oil over time releasing free radical compounds. Which is why I want to start roasting or braising my foods and move away from frying foods. (Personally I think the nonstick substances we cook with does way more harm than seed oils would)
