Breeding small crayfish in rice fields proves to be big economic boost for Chinese farmers

Chinese diners have developed a craving for crayfish, the small, freshwater crustaceans common in North America including the US state of Louisiana where they are known as crawfish. They were first introduced to China by the Japanese, who kept them as pets, and set free at the end of the second world war. Today many farmers raise crayfish in rice paddies to generate extra income and provide some ecological benefits. China’s state broadcaster CCTV says that the small red crustaceans have boosted income for some farms by as much as 40-50 per cent.

For many centuries, Chinese rice farmers have combined fish farming in their paddy fields with growing rice. Little is left to waste. The fast growing carps are harvested when the fields are drained. Lotus growing ponds are often used in the same way.

In New Orleans, Louisiana we have been doing it that way for a long time , either in rice fields, or wild River/swamp caught
People love the crawfish here in USA. We sell them sometimes at supermarket in fish section of store.
The sensitivity toward pesticides in the crayfish will as well incentivise towards organic rice cultivation

At a buffet restaurant in Xiamen last October, live crayfish, shrimps, were plentiful. We picked shrimps, as they are meatier.
I know Chinese love the crayfish, but not me, I hate to peel the shells for small amount of meat.
