Chicken in Gourmet Mushroom sauce You will need: 1 1/2 cups chicken broth 1 package dried mushrooms 5 bone in chicken breasts or equivalent thighs 1/4 cup all purpose flour 4 to 6 tbsps cooking oil 1/4 cup butter 1/3 cup shallots, finely chopped 2 cloves garlic, minced 1/2 cup dry sherry 1/2 cup dry vermouth (You can use all sherry if you prefer) 1/2 cup whipping cream 1 large bunch of fresh thyme Salt & fresh ground black pepper to taste Instructions In a small pot, bring the chicken stock to a boil. Add the dried mushrooms, cover, and remove from heat. Let stand for 30 minutes to rehydrate, then remove the mushrooms and reserve the stock. Skin your chickens if need be, then salt and pepper thoroughly. Toss the chicken in a bowl with the flour to coat, then gently shake off any excess. In a Dutch oven or large skillet, heat 2 tbsps of the oil over medium heat, brown the chicken all over in batches, adding more oil as needed, then remove to a plate to rest. Clean out the Dutch oven of the oil, no need to scrape out any brown bits. Melt the butter over medium heat, cook the shallots and garlic until tender, about 2 minutes. Add the sherry and vermouth, bring to a boil and cook for 2 minutes, scraping up anything stuck to the bottom. Add the cream, thyme, reserved chicken broth(be careful not to get any grit from the mushrooms into the pot), and the browned chicken, bring to a boil, then reduce heat and simmer until the sauce is thickened and the chicken cooked through, 45 to 60 minutes. Taste and adjust seasonings if needed.
