Moulds travel on automatic conveyor belts
9. Proofer (Tray type)
Tray type proffer is there which provides enough good temperature and steam to enable dough and the yeast in it to rise
10. Tray type Swing Oven
Swing tray oven is the best oven for bread baking as it saves heat and moisture. Economical and fast. One oven can produce around 40,000 to 65,000 bread loaves each day.
11. Cooling tunnel or Tray type cooling system
12. Bread Slicer
High speed bread slicer cut down bread loaves into thin slices at a higher speed of 3000 breads per hour

question 1). how we set expiry date(i am not asking about printing,i am asking about that how we set expiry date that this bread will not be rotten before this much day like manufacturing date & expiry date) on bread? question 2) . As this is a food item,how we will test that this batch of bread is ok for eating (like quality & safety testing).Do we need any eqipment for testing of dough & bread after bake for safety.

I guess, take random samples, & get it tested at a forensic lab , There r food testing labs ( fassai recognised labs )which accurately tell u nutritional values & ingredients used, same lab must b checking for soiled food product after how many days . Once u hav this data for the Manufacturing process .. Den u wont need daily testing ..

Wtf! Honestly The equipment is good but the workers are not you guys not knowing the Good Manufacturing Practice from workers job the proper attire while in production the owner should implement proper hygiene to the employee. Use gloves and mask and proper clothing 🙄 and don't touch the food while in the machine without using gloves.
