Bread and Butter Pickles - Traditional Newfoundland - Bonita's Kitchen

Today we will be making - Bread and Butter Pickles! these are so easy to make and tasty with a meal or on your bread. SEE RECIPE BELOW!

Ingredients:
8 Cups Thinly sliced cucumbers
2 Tbsp sea salt
8 Cups sliced onions
1½ or 2 Cups white sugar ( your choice )
2 Cups white vinegar
1 Tsp celery seeds
2 Tbsp mustard
1 Tbsp Mustard seeds
1 Tsp turmeric
½ Tsp white pepper
2 Bay leaves and 1 tbsp or less pickling spice in a cheese cloth
4 to 5 Cups Ice cubes to cover
Method:
In a large boiler add, cucumbers, onions and sea salt, cover with ice cubes let stand for 2 or 3 hours.
Add more ice if needed.
Then combine vinegar, sugar, celery seeds, mustard and mustard seeds, turmeric and white pepper, in another boiler.
Place boiler on a medium heat, bring quickly to boil and then boil for 10 minutes.
Then drain off water good from veggies then add cucumbers and onions to mustard mixture bring to boiling point, then remove from heat.
Add equal amounts to your prepared mason jars and clean around rims before putting caps and lids on, then bottle in a large canning boiler, follow recipe below.
Sterilizing and Canning Procedures
Sterilization method::
1. Start by getting a large boiler and filling in about quarter full of water.
2. Then starting the water to a boil and placing your Mason jars inside then cover.
3. After let the pot boil for about 15 to 20 then remove your bottles and place them on paper towels or a cloth.
Canning Procedures:
1. After your food items are cooked and ready to bottle, scoop hot liquid and put inside your Mason jars.
2. Continue doing this until all bottles are complete and leaving ½ inch on top.
3. Clean around the top of your bottles removing any food of rims.
4. Then place caps and lids on your jars and tighten.
5. Then place your jars back in hot water bath and start the boil for another 5 minutes with the cover on boiler.
Helpful Hints: Celery Seed Substitute. One teaspoon of celery seed equals 2 tablespoons minced celery tops. Other options are dill seed or celery salt (reduce the salt elsewhere in the recipe).
Celery seeds are ground and combined with salt to make celery salt. This results in celery seed and celery salt having similar flavours except that celery salt offers the flavour of two spices instead of one. ... You will have to use more of it if to increase the celery flavour in your dish.
So if you substitute celery salt for celery seed don’t use sea salt at the beginning only celery salt.

    Hi Bonita. Love your videos. For cutting Onion, fold a paper towel several times so you send up with a "paper towel pad" about 3" square. Dampen the pad and place on your cutting board in a spot that is right next to where you're going to cut your onions. The water in the pad will absorb the strength of the onions as soon as it is released into the air. Happy onion cutting!

    Thank you for your recipe on Bread & Butter Pickles. I too can my B&B pickles using my Aunt Sarah's recipe. I will be entering mine in our State Fair of Texas this year as well as my Pickled Beets. I may try your mustard recipe. I can already sense how wonderful they are. Mine is a sweet pickle taste.     Hi Shelley: Thank you for your lovely message, I'm always glad to help. These bread and butter pickles are a mix of sweet and sour and works well with so many different meals. I love having mine with a salad, roast beef dinner with veggies, and these on the side. I love going to the farmers markets and I'm sure the state fair is pretty much the same thing. Enjoy Bonita

    I will be trying this recipe! In exchange, I give you one of my recipes using the Bread and Butter pickles as one of the main ingredients! My Mom always made these pickles , but the recipe was ;ost somewhere along the way. My favorite use of her B&B pickles was in making sandwich spread and Ham salad spread. I used the B&B pickles I found in the stores, but those never have the onion rings in them! To my mind, the sandwich fillings were not as good. Using a meat grinder (or food processor) Cut about 1 pound of ham chunks from a baked ham and use about a pint of the B&B pickles. run them through the grinder alternately into a large bowl. Try to not get the pickle juice in there too much..don't want it too wet...makes for soggy bread! Once you are finished with the grinding scoop in about 1/2 cup of mayonaise stri well can chill...Voile' Ham Salad Spread! The second filling is plain Sandwich Spread, Get a 1 pound ring bologna (make sure it says "fully cooked' on the lable)....remove the casing and use the grinder the same as you did for the Ham...blend with the mayo and you have something the local store charges $6.99 a pound for!! Both are tasty sandwiches.

    One sure fire way 100% to prevent teary eyes from cutting that many onions is this, after the first two you slice up, immediately tell the husband to take over and slice up ALL of the rest ! No questions or backlip from him accepted. Fool prove and 100 % guarenteed .

    What a great recipe, thank you! Have a question for you, if I may ... I know you did this video a couple years ago, but I'm just discovering it now :) I am wondering why, when you get to the sealing process, your water does not cover the jars. Any other tutorials I've watched, it says the water must be at least one inch above the jar tops. Just wondering your thoughts on that! Thank you again.

    Hi Mary: Thank you for your message and for stopping by, I'm so glad you enjoyed our recipe and video. Canning /sealing is all about the heat, so you can boil the bottles in the low water level and cover the boiler and the steam and water is still sterilizing your bottles and after when you put them back into the boiler to seal. The water and steam is sealing the lids to the bottle because of the heat. You can also seal them in the oven, that is the way my aunt has always sealed her mason jars.     Because onion fumes to go moisture (your eyes), place a wet towel very close to where you are cutting. The irritating fumes are drawn there, instead of your eyes.

    Thank you for this. I have a bunch of cucumbers and onions from my garden and will do this. But I’m confused about the liquid. Do you top off the jars with liquid? It looked like you were just putting in the veggies without liquid. What should I do?

    Hi B Lawson: Thank you so much for your message and I'm so glad you stopped by, this is a lovely recipe for Bread and Butter Pickles and everything is all together in the boiler. After you drained the water off your veggies, you add the veggies to the vinegar mixture in the other boiler. There is more then enough liquid there for your pickles, so after its cooked scoop up equal amounts of the pickles and the liquid into your mason jars.     I cry less if I keep my onions in the fridge and leave the bottom of the onion in tact. I cut in half lengthwise through the root and lay each half on its side to dice and leave a half inch on the root part and discard.

    i noticed that you didnt have water covering the jars when you processed them for 10 mins is that ok to do never saw that done before or maybe i didnt see that great and they were covered with water

    Hi Dennis: Thank you for your message and for stopping by, you seen correctly. There is so many ways to seal your jars and this method got the same effect as covering the jars. What you need mostly for sealing the jars is heat, so if that comes from the steam in the boiler or the heat in the oven. Make sure your bottle tops are very clean from food and the lids, caps and bottles are sterilized before, then pop them into your boiler with the water 1/4 the ways up and cover your boiler for 10 to 15 minutes. Take them out carefully and sit at room temperature, you can even count the amounts of pops your hear in the lids as they seal, check them to see if they are all totally sealed and store in a dark and cold storage.     i cut a potato in half and leave it on counter when i cut onions seems to work they say the potato will absorb the onion

    Do not cut the root of the onion away until you cut what you want off the onion. I didn't believe it until I tried it!
