Brad Makes Ginger Beer | It's Alive | Bon Appétit
Тәжірибелік нұсқаулар және стиль
Bon Appétit’s Brad Leone is back for episode 58 of “It’s Alive,” and this time he’s making ginger beer! Join Brad on another fermented adventure as he experiments with different types of ginger, draws up plans for a Bon Appétit haunted house, and teaches some coworkers how to play the moderately dangerous game of "dry ice."
Join Bon Appétit Test Kitchen host Brad Leone on a wild, roundabout, and marginally scientific adventure exploring fermented foods and more. From cultured butter and kombucha, kimchi and miso, to beer and tepache, learn how to experiment with fermented and live foods yourself.

Brad strikes me as the kind of coworker who everyone likes and feels comfortable around, but is always riding the edge of HR needing to tell him to tone it down.

If you leave the skin on the ginger, it will help to boost the yeasts that create the fermentation. :) That's why irradiated ginger doesn't do so well, since the skin is the part that has been "sanitized." I've had pretty good luck with organic, though! And I was so happy to see someone else reuses kombucha bottles--they're the best! All of my friends know to save them for me....the crazy bottle lady. :P

Chlorinated water isn't usually recommended for fermentation because it is said to kill the yeasts needed for the process. Think fish aquariums. Let tap water off-gas the chlorine for a day or two before exposing yeasts to it.

I'll be making my first batch ever of ginger beer. Am a big fan of ginger beer and ginger tea. Don't just throw away the ginger pulp when finished; boil it up with some honey and make it the basis for ginger teas. It keeps for months in the frig and can be added to green, black and other teas; iced or hot. Boil the mash with added water and honey; cool to room temp, and put it in a blender for 10-20 seconds. No need to strain.

This is the second brad video I’ve watched and I’m DYING I love his humor and the editing is HILARIOUS
WOW. this is incredible. the editing is immaculate. never tasted anything like this before. the way it just melts in your mouth is really exquisite. 10/10. will eat again.
i pray for the day brad will collab with julien solomita- the Energy would be insane

So glad I found these videos. Brad is freakin hilarious. And somebody needs to give this video editor an award or something. So great.
2:55 the explosion sound effect was probably the funniest thing I've ever experienced 😂 give these editors a raise
Brad: "careful of the box grater, it'll slice up your knuckles!" Brad: *sticks an entire knife in his mouth*
"He likes when you say action" Brad is a babyyyyy and that's that
All the videos I've watched so far about ginger beer always say to keep the ginger peel on, because it's where the bacteria is and will trigger the fermentation... worth trying (and probably someone already commented that...). Loved the video and Brad! :D
How have I only just discovered this show, it's amazing.

I think the yeast you need for fermentation is mostly on the skin of mature ginger.
This comment will probably end up lost, but This is actually Bon Appétit's 1000th video!!! Go, Brad!
