1) Bosnian coffee - strong and flavorful

Bosnian Breakfast in Mostar, Bosnia and Herzegovina Travel Food Video Transcript:
Hello again from Mostar. We have been eating our way through the city and it has been wonderful. Today we're going to be showing you guys breakfast. Bosnian breakfast so we're eating at restaurant (Restoran) Divan and we are starting off with Bosnian Coffee which has quickly become one of our favorites. I love the presentation.
Back to the coffee preparation. It is prepared by boiling water and then you take the water off of the heat, you add your coffee grounds and then you put it to boil then you get this and because the grounds are in the water you have to let it settle so that you're not drinking you know crunchy coffee grounds.
I'm going to pour myself a little cup. You take the cube and you kind of nibble a little bit out of it. Bite the cube and then you sip your coffee.
That is nice and strong. Flavorful. Potent. Just the way I like my coffee. It wakes you up in the morning.
The food has arrived and as you can see the portions are massive. You know what the portions have been massive everywhere we've eaten. Yeah. Like they are really generous with their food here. They did say this was an appetizer for two. I mean are we going to be able to eat all this? Like look at the fritters that is a lot. I feel like this is an appetizer for 4.
I'll tell you what we ordered. We got uh a mixed platter. We did. With beef prosciutto, smoked sausages, travnic cheese (Travnički), livno cheese, sach cheese, sour cream and local doughnuts (miške). I actually tried these a few days ago yep we had them with cream cheese at another place.
They are really tasty. It also came with vegetables. Like cucumbers and tomato so yeah. And we have we've also ordered a couple kind of desserts to add to the breakfast fast.
Dessert for breakfast. We are really improvising here. So look at this. This looks amazing. I'm just going to break it in half with my hands. It is almost like a donut (Uštipci).
We just couldn't resist ordering a little something sweet. I believe this one is called Hurmašice. We had it once before at another restaurant it is very good by the river and it is basically like a coconut cookie. I think they call it a coconut finger. That is just like oozing sugary syrup.
Sam is going in for the other dessert called Smokvara. Yeah. And it is basically if you look at the shape it looks like it is shaped like a fig patty. And if you think the coconut dessert had a lot syrup this one is swimming in it.
That was a top notch breakfast. In terms of price point it came to 29 in local currency which was uh 17 US dollars or 14 Euros and we were defeated by that breakfast. We couldn't even finish it all. It was so much food but it was delicious. The setting was great and yeah it was just a wonderful way to start the day. And there were cats. Lots of happy moments so we'll see you guys next time.     What's even better is that the camera cannot really (in my experience) replace nor reproduce the IRL experience while sitting there, at that very place. The same could be said about much of the locations in downtown Mostar, the city with really tragic history, now void of it's "original" inhabitants, who fled the war pre 1992. and during the may and following months of 1993. The way of life, atmosphere on the streets and number of people day in and out at the very area the video is made is nothing like it was pre-war. To say that the life in the city is shadow of itself is a groce understatement.

    My favorite Bosnian breakfast is "chimbur". It is omelette over lightly carmelized onions and some people add soujuk(smoked sausage). Mmmmmmmmm

    That copper pot is called cezva, pronounced az JEZ-wah (it can be called ibrik as well). It originates from Turkey. The ground coffee is brought to a boiling point together with the sugar (or cinnamon) and the water three times. Each time, they stir this mixture. Arabs drank coffee with cinnamon, the Turks put sugar in the coffee. The bedouins ate sweet dates with the coffee, because they did not know sugar.

    In Bosnia we do not boil sugar with the coffee, we place the coffee into dzezva and let it burn a little bit and then we pour boiled water, that is how you get that thick foam on the top. The sugar or lokum is served in a separate dish on the coffee plate

    thanks for descriptive message but noone calls the cezve/dzezve "ibrik" apart from greeks, because ibrik the ewer/pot/bucket used in toilets. All post Ottoman countries calls this coffee pot"cezve" and that is how it is known. Plus calling this kitchenware thing ibrik is not really nice especially somthing used in toilet to clean yourself

    Bosnian coffee is by far the best in the world. It is actually also called Turkish coffee as it was brought to us by the Turks during the Ottoman empire. I miss it... Bosnia is just a very unique place... best place in Europe in my opinion.

    If you haven’t tried dessert called Tufahija, be sure to do so. Its boiled Apple with stuffed wallnuts, syrup and whipped cream. Btw the meal you ate is Ushtipci and if you go drinking, most of the prople order that with their heavy drinks like homemade brandy called Loza

    And you didn't have to wait for the coffee ground to settle down on the bottom because it is already settled in a coffee pot. :) Most of the Bosnian restaurants in USA serve the Bosnian coffee .

    it is not stronger than good Italian espresso BUT that said, it can be very strong, depending how generous you are by making it. I am strong coffee lover and have triple coffee pot like this one, making it every morning. Beautiful presentation of my hometown. Glad you enjoyed it.

    What you got for breakfast is what you can also eat for any meal of the day, this is how bosnian food works. You got the beeest brands of cheese, also quite expensive because of the fact it's 1st class. Wish you went to Sarajevo to try ćevapi from Baščaršija. Greetings from Bosnia :)

    We will be there end of June, so excited..Our daughter and her husband have been over to Bosnia 2 times helping with a camp over there. Mostar is so beautiful and I am excited to actually get to see it in person

    That is a good tip for making coffee if you ever run out of filters or don't have a French press. You can buy saucepans like that on Amazon. I have a similar one. I didn't get it to make coffee in though. I make Slippery Elm Syrup or melt butter in it. You could probably make the coffee in any saucepan but the shape of that one helps to keep the grounds from pouring out when you pour the coffee. Otherwise you might need to strain it.

    Typically the grounds used for this coffee is more like a powder than a grainy texture. That’s why it is so smooth to drink!

    but unfortunately isabella doesnt know that there are two types of "bosnian" coffee; ground coffee as mljevena kafa and crushed/stamped (for the lack of a better word) coffee as tucana kafa. the second one has definitely grainy texture so i guess you had tucana kafa

    Uštipci is that sort of heavy fare breakfast that you have once in a while. I remember as a kid, that I loved and hated it at the same time. You can't resist the crunch and taste, hence you can't stop eating them, but they are so greasy that every time I ate them, I'd get nauseous afterwards. Audrey, you are absolutely right about it being a fried doughnut. It is dough that is usually prepared without any sugar, so it can go with sweet condiments (Marmelade, Nutella) or savory ones. You just ate 8ish fried doughnuts for breakfast, so if you weren't defeated by that, I'd be worried.

    local donut in Herzegovina called "peksimet", in Bosnia is called ushtipci, but you are right this one are ushtipci, the shape are like that. Peksimet is a little different shape ◊ and more flat.

    Yes, I know. Late again. I grew up having coffee like you had there most of my life. I don’t know if they bring the ice water on your tray for this reason but a splash of really cold water (no ice) pushes the grounds to the bottom. Maybe they bring the water to drink while you wait or maybe they have a lot who don’t want to wait and prefer to use the cold water. The challenge to doing this is finding the correct amount of cold water to push the grounds to the bottom without adding so much you end up cooling your coffee. Just an FYI. If I am in trouble for tipping them off, SORRY! It’s time

    I am still shocked that you guys did not visit the Neretva river canyon north of Mostar and tried some amazing salmon from those salmon fish farms in the canyon anyway maybe next time if you come back do try spit roasted lamb in some of the restaurants in the canyon or in Mostar city
