Glad to see you both on screen once more. Traditional payas take two days also. They make a masala yakhni with the heads and spices. I use the gut (knees) instead and cook them slowly. Then add that yakhni to the payas. You seem to be mastering some pretty time consuming and hard dishes. Please keep cooking and entertaining.
