Bohra Cuisine-Masoor pulao Sarki Recipe | Masoor pulav Recipe
Sarki is a bohras Traditional Recipe simply made with Black masoor dal and adding other main ingredients like
spring onion,cucumber,lemon or curd or grated raw mango.
Its an Refreshing watery kind of soup which is consumed with masoor pulao.
Ingredients For Masoor Pulao:
Kala Masoor (Black Lentil) - 150g
Basmati Rice Par Boil- 250g
Cumin Seeds - 1 tsp
Garlic (Chopped)-7-8
1 Cinnamon Stick
4 cloves
1 onion chopped
3 Green Chillies
Red Chilly powder- 1 tsp
Coriander powder- 1 tsp
Turmeric powder- 1/2 tsp
Mint leaves chopped- 1cup
Coriander leaves Chopped - 1/2 cup
Method:
-Firstly Soak Kala Masoor in a water for about 1-2 hrs or more.
-then boil Kala Masoor adding Enough Water (2 Glass),pinch of turmeric powder and salt.
-boil for 15-20 minutes (cook 80%) don't over cook.
-after boiling dal,Strain the dal water and Reserve the dal Water (Will use while preparing sarki)
-Now heat a pan, Adding 5-6 tsp of oil.
-Splutter with, Jeera,cinnamon stick,cloves and GArlic.
-saute till garlic turn brown.
-After Add Onion and Green chilies and saute till onion turns brown.(be careful don't saute much onion)
-now add red chilly powder,Coriander powder, Turmeric powder & salt.Saute till Aromatic.
-now Add Boiled Kala masoor dal and stir it well.
-turn off the gas Flame and give a charcoal smoke.
Now in a bowl save the 4-5 tbsp of above prepared masala dal (Will use while preparing Sarki)
-Finally add Chopped Mint Leaves and Coriander Leaves.
-Now in a Big Pot,Add 3-4 tsp of ghee.
-Now layer it with par boiled rice(half of the rice)
-then layer with masala masoor dal And finally Again with Rice.
-Add 1 glass of water.
-Close the lid and cook for 20-25 minutes fron high to low flame.
-Masoor pulao is ready.
Sarki Preparation.
Ingredients:
Reserve Dal Water.
Reserve masala dal
1 Cucumber Grated
1/2 cup chopped Spring Onion
Black Pepper powder - 1 tsp
Roasted Cumin Powder - 1 tsp
Lemon juice-1/2 or you can use
2 tsp curd
or
2 tsp Grated raw mango
Sarki Preparation:
-Firstly Grind dal in a mixi (Finely Paste)
-now in a Bowl,Add dal water and grinded dal paste.
-Mix it well
-Now add grated Cucumber,Chopped Spring Onion,Black pepper powder,Roasted cumin powder,lemon juice
and salt to taste.
-serve at room Temperature.
-Enjoy With Masoor Pulao

Although it's good but u need to add curd in sarki, also add grinded birasta in msoor n a bit of curd mixed vl make it more juicy n prior to laying 3rd layer of rice spread sliced tomato on msoor

No dear you can't replace the Cucumber, But you can skip Cucumber if you don't like the flavor.
