I have a 77 R100 with the same wheels. I sanded the spokes with a very fine sandpaper to get the surface rust off. I'm afraid that I sanded the zinc coating off though. If I were to buy stainless replacements, could I remove and replace the old spokes one at a time with the new ones, or is this a job that requires special tools to create even tension? What kind of work did you do on the 77 R100 while the wheels were sent off? I just got mine running after 20 years sitting in the garage. I'm thinking I need to rebuild the master cylinder because the braking is pretty weak compared to the 87 R80 dual disc I had before.
