WHITE CHOCOLATE SPONGE, 32x22 cm
100g egg yolk
100g sugar (1)
55g all purpose flour
25g skim milk
35g white chocolate
35g butter
125g egg whites
35g sugar (2)
VANILLA MOUSSE - for 8 cavities, 60 x 60 h 39 mm each
95g milk
75g heavy cream (1)
50g sugar
75g egg yolk
7g gelatine
215g heavy cream (2)
1 vanilla pod
MIRROR GLAZE
300g sugar
300g corn syrup
150g water (1)
300g white chocolate
200g condensed milk
20g gelatine powder
120g water (2)

    The mold in which I assemble mini cakes in this video is Square Sphere 110. Each cavity has the dimensions - 60 x 60 h 39 mm

    Beautiful cakes 💖 If you put the whole vanilla pod in with the scraped put vanilla beans before cooking the egg mixture it'll add even more flavor, or save them to infuse alcohol or put into something else. They are still useful after being scraped out.

    Absolutely! I collect all vanila pods and then grind them in a blender into powder and use it like this on multiple occasions .

    @@cakeoclockkw I had a feeling you saved them. No way you practiced baking to make those cakes and didn't know to save the pods. I didn't know you could grind them up though, thank you for that. You learn something new everyday! 🥳

    Thank you! I use many different brands of food colors. In this video i use “kondiPRO” water-soluble food colors.

    If you work with any egg replacers/egg substitutes you can probably use them according to manufacturer instructions. I do not work with any of them so i can not help you with that🤷‍♀️🙃

    I use "no name" corn syrup from a local store, because I like its price and fluidity . I believe any brand will works well. Also you can use glucose syrup instead.

    На самом экране "окошка" есть опция "СС" - для субтитров она должна быть включена. Если по каким-то причинам не работает🤷‍♀️, спрашивайте - я постараюсь ответить на все вопросы тут.
