The chicken/meatball/eggplant/veal parm hero - not only is it my death row meal, it's the object of affection for many of our favorite fictional characters. Spongebob buys an entire house made of parm hero, Joey Tribbiani nearly takes a bullet for one, Agent Harris feeds one directly to a parasite plaguing his body. Go way over the line for this Italian-American classic today - and yes, in this context, it's spelled 'heros'. I think.

In science class we learned that some people aren’t able to taste cilantro normally (tastes like soap) because of their genes, and immediatly I thought about Andrew and how he doesn’t have a palette for cilantro. You’re not alone.

Of all the parmesan meals, eggplant is my hands down favourite. Always had a soft spot for most things aubergine since my grans used to fry up eggplant chips as an appetizer for us in preparation for the good ole Sunday Italian pasta and meatballs with home made apple pie afterward. Good times!

I wish you would've gotten into the nomenclature of why it's called "Parm," but given that you called it "parmesan," maybe you don't know? Veal and Eggplant Parma were the original dishes. Chicken came later. Meatball came later than that. They're called Veal, Eggplant, Chicken, or Meatball Parma or "Parm" because that's where they were created: Parma, Italy. This is also why dishes called Parma, erroneously called "parmesan" in America, feature MOZZARELLA instead of parmesan: the dishes are named after the city, not the cheese which also takes its name from the city. So when people ask you why "Chicken Parmesan" features mozzarella instead of parmesan, you can explain that both the cheese and the dish are named after the city, but the dish created in Parma always featured mozzarella.

Matthew Cafaro It's not really erroneous to use the term "Parmesan" as it's simply another word for Parmigiano. It started in France but means the exact same thing. Under Italian law, only cheese produced in certain provinces may be labeled "Parmigiano-Reggiano," and European law classifies the name, as well as the translation "Parmesan," as a protected designation of origin. Everyone knows that Chicken Parmigiano was first made by Italian-Americans but both that name and the alternative "Chicken Parmesan" refer to the style of cooking in Parma and not necessarily the cheese that's being used. Americans, et al, are free to use whichever name they prefer. Neither name is technically wrong.

I had really bad appetite issues recently and watching your videos always makes me hungry, thank you.
You will probably never see this- One of the major reasons I like you, is that you incorporate unconventional techniques into simple recipes, you include food science and give a brief overview of why you do what you do. In the 90's and up until 2010, (im 27 so limited view) chefs would basically just go down a list of ingredients, times, and temperatures with no real explanation of why.

Just a little tip for eggplant, if you want less seeds, when shopping, look at the bottom of the eggplant, if it's a circle, it's a male, if it's a slits, it's a female, and the males have almost no seeds

Always be sure everything is kosher when bought. Otherwise, you can’t be sure what’s in there unless you grow it yourself.

Honestly, I was delighted to hear the salt trick as well even though I don't mind the bitterness of veggies (and generally enjoy more bitter flavors in food). Gonna totally give this a try with eggplant and also grab some zucchini and deep fry some of that, using the same trick there. My housemates are less fond of bitter so this may just become a necessity if they like it. Though, definitely also doing those meatballs because mmmm...

Cool it, then pour it into an empty plastic bottle and discard, Otherwise, if you have a yard, its totally kosher to poor it out in some dirt. Otherwise, If you didn't fry a lot, strain it and save it.

No not at all, sometimes I'll leave the pot of oil out for days. But I got a fryer recently, its amazing, drains and strains the oil when your done into a built in container with a pour spout to reuse or dispose. I like that guy.

I used to always just keep a pot that I would cover for a week or so. id strain out the bits. after each use. Now I strain and store in a jar in the pantry.

I went halfway through this video with the speed accidentally on 1.25 and when I realised and turned it off the slow richness of the normal pace was orgasmic
I love doing eggplant parm, though I was always told to bake the eggplant because it'd absorb too much oil. Which TBH works fine for how I serve it, doesn't dirty a pan, just takes longer.

Shout out to the eggplant parm. I used to work in an Italian sandwich shop with part of the benefit being a free sandwich on lunch breaks. Started out only getting the veal or chicken, but after I decided to try the eggpant I never turned back. My fave simple sandwich to mak of it was using a small roll, two fried eggplants, stacked with provolone on top of each piece, a light dollop of sauce, and then on the roof of the bun I'd lightly smear a spoonful of our house-made jalapeno spread. Damn, I miss eating those.
Hey Babish! I just made my own burger tonight. I'm only 14 an I made the pattys myself, I made 4 burgers and 3 sliders. It was strange to touch the raw files the first time but I got over it quickly. I made a cheese in the middle from one of your videos. Ice burg lettuce, white onions, and pickles. It tasted great. I got back into cooking thanks to you.
