    Local shops will often cut you a 2-for-1 deal if you know them, or maybe they won’t charge you for toppings, etc. It’s part of the perks of being well-known in a community. In this case it could also be they get away with selling one Philly+Dasani for $4.95 each somehow. Maybe they get a lot of business. Or maybe because everyone is poor, demand is highest when prices are lower.

    It was a promotional spot for Max's on an international platform. I think the most overlooked cheesesteak attribute is a hollowed out hoagie roll. Whiz or American? Provolone is acceptable but never swiss. Onions and peppers are a must. Mushrooms, red sauce, and bacon are upgrades. However, if the roll is not hollowed out and sturdy, the toppings and meat won't fit. They will spill everywhere and the roll splits are the worst.

    Here is the spill: From my experience of being born, raised, and living in Philadelphia for all my 25 years of life, the varieties of cheesesteak differs mostly among race/ethnicity. The classic “saltpepperketchupmayofriedonions” (yes, one word) with plain white, American cheese is a staple among ethnic groups within Philly, particularly African American. Reason for this: Papi Stores (aka what we call a bodega in Philly) among lower income neighborhoods. Get you a Cheesesteak platter with fries for $5-6. There is a Papi Store on almost every corner in the trenches, the real hoods. The White Folk love their Traditional cheesesteak! Sliced rib eye, not diced! Classic cheese whiz or provolone and fried onions. Ketchup is not an acceptable condiment. This traditional steak is the stereotype depicted to anybody not from Philly. Your classic tourist spots like Geno’s, Pat’s, and Tony Luke’s. Hope this was an educational guide to the variety of Cheesesteak served throughout Philadelphia. Would really like to see if anybody from Philly in the comments agree or disagree

    Not from Philly but from Lancaster PA. For some reason if you order a cheese steak anywhere in this county, they put marinara sauce IN THE SANDWICH. And employees get confused if you ask for it without sauce. Heresy.

    I am from philly also, and "I am from philly, this is how you should make your cheesesteak" is how you make your cheesesteak. some like it with wiz, provolone or american, mayo, ketchup, cheesesteak hoagie, mushrooms, peppers, fucking anything really. but the way each individual person eats it is how that person thinks EVERYONE should eat it, because in philly you're right and everyone else is wrong.

    Made this yesterday. Really good tip on 30 mins in the freezer! Thin slices were no problem at all. A few things I would have done differently after devouring the entire thing: 1) three slices of provolone vs. two if your slices are on the thin side, 2) finish the meat with a pinch of salt and a grind or two of pepper before layering the cheese, 3) I had a tough time getting the peppers in every bite, so a possible alternative would be to layer them on top of the meat mound right before laying the cheese to lock them in, and 4) after making the sandwich, I rolled mine tightly in parchment paper as if making it "to go" and let it rest for a minute or two. This seemed to really lock things together and the second half kept it's shape. It also made it feel more "legit".

    Andrew, I think mayonnaise and ketchup on a cheesesteak isn't a problem. I've seen numerous Philly natives do that, but they don't use mayo as a condiment. They use it a bit like butter to toast the bread and give it some umami, particularly mayonnaise with olive oil in it. It's quite strange but certainly gives it a unique flavor. Personally, using "Hellman's" and "Miracle Whip w/ Olive Oil" are the two best ones I've done this with that give the cheesesteaks a bit more depth of flavor. As for ketchup, as a condiment it's good, but I've seen some people use it to create a nice dipping sauce with some other ingredients such as roasted garlic and red pepper flakes.

    Being from philly i can tell you. Different people like their steak with different toppings. Some people like mayo, or ketchup. Some people even like mustard on their sandwich. Onions (fried or not) pickles, cheese wiz, provolone, american cheese, hot or sweet peppers, it's all interchangeable. The core of the sandwich is the meat and cheese (of your choice) everything else is just up to your own tastes. IMHO, they're all pretty good with or without all the extra toppings.

    J kellz don’t forget a good roll! That’s the difference between a good Philly cheesesteak and the greatest sandwich you will ever have. Also, wiz wit is the way to go. The wiz mixes the meat perfectly. I only like mayo if I’m getting a cheesesteak hoagie, but to all their own. Also, Philly cheesesteaks can have sweet and hot peppers on it but NOT regular green and red bell peppers. Everywhere not here in Philly seems to think that bell peppers are normal for a cheesesteak. It isn’t.

    Ok let me break this down for you guys, from a person that lived in Philly his whole life. There are technically two cultures of cheesesteaks in philly, they are similar but not the same. Food truck/Corner Store style: It’s a cheap cut of steak (steak always chopped), sliced American cheese and usually served with ketchup and/or mayo. Wrapped in white paper aluminum foil. Traditional style: Higher grade steak (ribeye) cut into thin slabs (steak chopped optional) simply served with cheese whiz (or Provolone, American). Wrapped in a paper or wax paper wrapper. It’s also important to mention there are sub-genres of cheese steaks too. Like Milano steaks, pizza steaks, cheesesteak hoagies, chicken cheesesteaks. Wit or wit out (with onions/ with out onions). Ingredients like peppers and mushrooms are also optional for both styles. What ever you like, have it. In my opinion there’s no right or wrong way to enjoy a cheesesteak, as long as you’re eating and enjoying that jawn.

    I think they let some LA/Hollywood people write the dialogue for this scene in Creed. In philly, when ordering a cheesesteak, the questions are cheese whiz or provolone, with or without onions... and thats it. If you are odd, you ask for mushrooms. and if you are odd, you put a couple hot peppers on yourself. but a quintessential philly cheesesteak is whiz/provolone with or without onions. Or if you know your stuff, its "one, provolone, wit"

    One missed step: Scoop the rolls. Just slicing the roll in half doesn't leave enough room for the contents, so you scoop some of the bread from the center. That goes for cheesesteaks and hoagies.

    As someone who lives in Philly, I can confirm that ketchup is fantastic on a cheesesteak; never had one with mayo, though. The lack of onions is unacceptable though.

    I've lived in the heart of Philadelphia all of my life. I can't stand seeing national chains offer "Philly cheesesteaks" that automatically come with peppers and/or onions. THAT IS NOT A PHILLY CHEESESTEAK! When you order a cheesesteak from a local pizza store, you're going to get meat and cheese (usually white American or provolone) on a delicious roll (the roll often determines how good the sandwich is) and just that simple is delicious already. People can pay for extra toppings if they want. These include mushrooms (my favorite), sweet and hot peppers, pepperoni, bacon, broccoli rabe, onions (raw or fried), and other stuff too. You can also ask for condiments. I usually go with ketchup, but mayo is good too, I've just never had them both together. You can change what kind of cheese you want as well, but not every place offers cheese whiz. We also offer chicken cheesesteaks which is finely chopped up chicken instead of steak. Buffalo chicken cheesesteaks are glorious. If you ever come to the city, you have to try one. Now I'll offer some advice, avoid the tourist traps (Pat's, Geno's). You're overpaying for overrated cheesesteaks. The best come from the pizza stores that are dotted on just about every block throughout the entire city. If you want to risk entering those neighborhoods, lol. While you're at it, get some mega fries (a pool of cheese whiz, topped with a ton of fries, topped with a ton of shredded cheese and bacon). Oh and lastly, get a pizza roll from a Chinese restaurant. It seems like it's a very local thing, as I've seen it no where else in the country. Think of an egg roll but inside is just a ton of melted cheese with some pizza sauce. You should never pay more than $7-8 for a one-foot cheesesteak. Often the local pizza stores will have specials where you can get 3 cheesesteaks for $15-17. The mega fries go for around $6, and the pizza roll should be about $1.25.

    Yeah. I live near Dalessandro's and they make the best steaks in my opinion. Pats/Genos blows. Mama's in Bala Cynwyd is good too but they're expensive and greasy, though gigantic.

    I'm not mad about how he made it, cause it looks delicious, but I am a little sad he didn't do the trick where you put the roll on top, slide the spatula under, and just flip it over onto the roll. It's just not the same unless you do it that way.

    I used to work at a hole in the wall joint in chicago. We had a Philly cheese steak-esque sandwich. Italian beef, green peppers, onions, mushrooms, mayo on one side & sour cream on the other, absolutely blanketed in melty mozz, on a foot long French bread. It was a heart attack waiting to happen but it is by far the best sandwich I've ever had, & even though people will always tell me it's not a true philly, it's delicious.

    if you want another variant to try i have one for you. sauteed mushroom & onions no condiments. make a cheese sauce out of 50/50 sharp cheddar and provolone. then to dip it in a pizzeria style side of marinara sauce. it's good with the ribeye but try ground chicken. wrap it in foil and let it sit for about 5 minutes. the cheese sauce gets into every spot and dipping it in the marinara is a perfect counter to the chicken and cheese. its important not to put the marinara on it, but just dip it as it will sog out the beard almost instantly. also the fresher and crispier the roll the better. i would say the roll is damn near half the sandwich.

    I love my cheesesteak shop here in KY. He came from philly, Barry's cheesesteaks. Their "6 inches" are 10 inches long, the 12 inch is two of those. I weighed one of the sandwiches, almost a pound. 6.95/10.95. They sell out before close every day.

    I’m from PA. Not Philly but I’ve been there. Pittsburgh knows how to make a Philly cheesesteak too. No ketchup or mayo, grilled peppers and onions, mix the provolone in on the flat top.

    kbernstar yeah and also a traditional prolly cheese steak has no mayo or ketchup usually you can do hot sauce but never things like mayo ketchup mustard. Etc

    John Trollinburg I've lived in south philly my whole life and I've always put ketchup on my cheesesteak. The whole "no ketchup" or it's not a "real" steak is bullshit, don't be a dumbass

    Curtis You can get "The Sauce" they make with it that is tomato based- isn't ketchup. Cheese Wiz or American cheese. It is so much better.

    As a Philly boy, you can never get as good a Philly cheesesteak as in Philly. It’s all because of the roll. Whatever is up with the Philly water creates a whole different texture and flavor in the roll

    I like the offset bread knife Babish used at the end of the video, I have had several and use them daily. Like Bourdain talked about in that book.

    I have to say that while I’m not from Philly, we do love cheesesteaks in Boston! Ketchup is my standard condiment, never tried it with mayo though. Can’t be as bad as my buddy’s favorite which is mustard.
