Hi Bharat ... I'm gluten free & have no wheat products at home - so no maida. I have gluten free flours ... but guess what ... I decided to add dosa batter instead of maida + 1 tbsp Nutritional Yeast for a cheesy taste ..! Result: two huuuge, insanely delicious omelets ..! Since I'm also Whole Food Plant Based Dairy/Oil/Sugar free too, having an 'eggy' omelet with toasted sourdough bread & homemade tomato ketchup was a treat. Next time I'll be making this recipe with kala namak. Thanks a heap, Bharat ..!

Whole wheat adds wheat odour to any recipe while all purpose flour is smooth and neutral.
