Alur kochuri (potato-stuffed flatbreads) is a delightful Bengali snack, especially popular for evening tea time. Here’s a simple recipe:
Ingredients:
For the dough:
1 cups all-purpose flour (maida)
1/4 teaspoon salt
2 tablespoons oil or ghee
Water (as needed)
For the filling:
1 medium potatoes, boiled and mashed
1 small onion, finely chopped
2-3 green chilies, finely chopped
1 teaspoon grated ginger
1/2 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
Salt to taste
Fresh coriander leaves, finely chopped
Oil for frying
Instructions:
Prepare the dough:
In a large bowl, combine the flour, salt, and oil or ghee.
Gradually add water and knead into a soft, smooth dough.
Cover and let it rest for at least 30 minutes.
Prepare the filling:
Heat a little oil in a pan.
Add cumin seeds and mustard seeds. Let them splutter.
Add chopped onions and sauté until golden brown.
Add grated ginger and green chilies, and sauté for another minute.
Add turmeric powder, cumin powder, coriander powder, and salt.
Mix well and add the mashed potatoes.
Cook for a few minutes until the spices are well incorporated.
Add chopped coriander leaves and mix well.
Let the filling cool down to room temperature.
Assemble the kochuri:
Divide the dough into small, equal-sized balls.
Flatten each ball slightly with your hands.
Place a spoonful of the potato filling in the center.
Bring the edges together to seal the filling inside.
Gently flatten it into a disc, being careful not to let the filling spill out.
Roll it out gently into a small circle, around 4-5 inches in diameter.
Fry the kochuri:
Heat oil in a deep frying pan over medium heat.
Fry the rolled kochuri until golden brown on both sides.
Remove and drain on paper towels to remove excess oil.
Serve the hot and crispy alur kochuri with tamarind chutney or yogurt. Enjoy your delightful evening snack!
