    thank you Chef Eric for the info and the very entertaining videos! I have a quick question while I get my new Big Joe III delivered to my house :-) Since you do not recommend to cook on new charcoals, do I need to see amber charcoals in the whole basked before starting a long low&slow cooking (i.e. pork butt)? Or is it ok to have new "cold" charcoals in the basket? Thank you in advance Chef!!

    I wish my experience buying the Kamado Joe Big Block "XL" matched this. Mostly much smaller pieces. Not worth the higher price compared with other brands.

    Yeah I live down in the southern hemisphere. It’s normally got a shit ton of coal dust and small bits by the time it arrives here. Maybe 70-80% decent lumps left roughly

    Low and slow you don't light all that charcoal. Your fire will run to hot. Light the top so fire burns down for a good 10 hours.
