Bharwa Bhindi is a popular Indian side dish where the okra (bhindi) is stuffed with a spicy filling. This vegan dish goes really well with flatbread like roti or paratha.
This recipe is super special to me because this is how my mom makes it at home. This is my way of recreating the recipe that I have grown-up eating for you!

(Bharwan Bhindi Masala)
Prep Time - 10 min
Cooking Time - 25 min
Serves - 4
Ingredients:
Okra (भिंडी) (slit & trimmed) - 206gm
Small Onion (छोटा प्याज़) - 100 gm
Oil (तेल) - 2 tbsp
Dry red chilli (सूखी लाल मिर्च) - 2-4 pc
Asafoetida (हींग) - 1 pinch
For Stuffing:
Turmeric (हल्दी) - ¾ tbsp
Chilli powder (लाल मिर्च) - 1 tbsp
Coriander powder (धनिया) - 1 tbsp
Cumin powder (जीरा) - ¼ tsp
Fenugreek leaves powder (कसूरी मेथी) - ¼ tsp
Fennel powder (सौंफ) - ½ tsp
Raw mango grated (कच्ची कैरी) - ¾ cup
Mustard oil (सरसों का तेल) - 2 tbsp
Salt (नमक) - 1 tsp
Kala Namak (Black Salt) - ¼ tsp
Tossing:
Raw Mango (कच्चा आम), Chopped - 1 tbsp
