초코 시트에 블루베리 퓌레와 생크림을 샌드한 초콜릿 생크림 케이크를 만들었어요~
초콜릿을 녹여 넣어 초콜릿 맛이 강한 크림을 케이크 겉에 아이싱하고 가나슈를 흘렸는데 깔끔하고 정갈한 느낌이 나서 예쁘더라구요~
위에는 블루베리를 자연스럽게 쌓아 장식해 마무리했어요~^^
케이크 시트에 뿌린 시럽은 설탕 1 : 물 5의 비율로 달지 않게 만들어 촉촉함을 더해주어 더 부드럽게 먹을 수 있답니다~
흰 크림 위에 블루베리 퓌레를 올렸는데 블루베리 잼이나 생 블루베리를 넣어도 좋을 것 같아요~

▶재료
달걀 4개
설탕 100g
꿀 10g
바닐라익스트랙 3g
무염버터 35g
우유 55g
박력분 110g
코코아파우더 10g
휘핑한 생크림 (생크림 250g + 설탕 20g)
블루베리 퓌레 50g
설탕 시럽
다크 커버춰 초콜릿 80g
무염버터 16g
생크림 160g
가나슈 (다크 초콜릿 20g + 생크림 20g + 무염버터 5g)
▶레시피
1. 뜨거운 물이 담긴 냄비 위에 달걀이 담긴 볼을 올리고 설탕, 꿀, 바닐라익스트랙을 넣고 온도가 40도 정도가 될 때까지 저으며 섞는다.
2. 핸드믹서로 풍성한 아이보리색의 거품이 될 때까지 휘핑한 뒤 박력분, 코코아파우더을 체 쳐 넣고 섞는다.
3. 녹인 무염버터와 우유를 섞어 둔(온도 50~60도) 볼에 반죽의 조금을 덜어 넣고 섞고 본반죽에 넣고 섞은 뒤 15cm 틀에 붓고 기포정리를 한다.
4. 170도 오븐(180도 20분 예열)에서 40분 정도 굽고 식힌 뒤 윗면을 잘라내고 4장으로 잘라 준비한다.
5. 시트를 돌림판에 올리고 설탕시럽을 뿌리고 휘핑한 생크림을 바른 뒤 블루베리 퓌레를 올린다. 2번 더 반복한다.
6. 마지막 시트를 올리고 설탕시럽을 뿌리고 휘핑한 생크림을 전체적으로 매끄럽게 바르고 냉장실에 넣어 둔다.
7. 다크 커버춰 초콜릿과 무염버터를 뜨거운 물이 담긴 냄비 위에 올려 녹이고 생크림을 2번에 나눠 넣고 섞은 뒤 랩을 씌워 냉동실에서 15분 정도 식힌다.
8. 뿔이 설때까지 휘핑하고 케이크에 전체적으로 매끄럽게 바른다.
9. 케이크 윗면 가장자리에 가나슈를 흘리고 블루베리를 올려 마무리한다.

10g Honey
3g Vanilla extract
35g Unsalted butter
55g Milk
110g Cake flour
10g Cocoa powder
Whipped whipping cream (250g whipping cream + 20g sugar)
50g Blueberry puree
Sugar syrup
80g Dark couverture chocolate
16g Unsalted butter
160g Whipping cream
Ganache (20g dark Chocolate + 20g whipping cream + 5g unsalted butter)
